Cute little berry cubes that bring joy to your life as well as your glasses. I use these in the Summer or Spring to bring a joy to a tickling glass of ice tea, farm water, champagne, wine, or tonic water. Easy to put together, and a glorious in view.

1/4 cup raspberry preserves
1 1/2 cups orange juice (or cranberry)

iced tea (optional)

Time 10m

Number Of Ingredients 8

3 - 4 Tbsp butter
1/4 c brown sugar
2 large firm, ripe peaches, cut into wedges
1 c raspberries
1/2 - 1 tsp grated candied ginger
1 Tbsp grand marnier
1/8 c white rum
garnish - vanilla bean ice cream

Steps:

  • 1. Place a large pan, on medium heat, add butter, sugar and pinch of salt, and melt.
  • 2. Add peaches and cook 3 minutes, stirring gently. Then add the raspberries and cook for 2 more minutes, then turn off heat. Remove the pan from the heat. Mix the grand mariner and rum together in a small glass, mix and add to the pan. Swirl the liquid in the pan and set on fire, allowing the flames to burn off.
  • 3. Remove from heat and serve over vanilla bean ice cream. Enjoy!

Tips:

  • Choose ripe, fresh fruit. This will ensure the best flavor and texture for your fruit rocks.
  • Use a variety of fruits. This will create a more visually appealing and flavorful dessert.
  • Be careful not to overcook the fruit. Overcooked fruit will be mushy and lack flavor.
  • Use a good quality champagne or sparkling wine. This will add a delicious flavor to your fruit rocks.
  • Serve the fruit rocks immediately after they are made. This will prevent them from becoming soggy.

Conclusion:

Fruit rocks are a delicious and easy-to-make dessert that is perfect for any occasion. They are a great way to use up ripe fruit, and they can be tailored to your own personal taste. With a little creativity, you can create fruit rocks that are both beautiful and delicious.
