Number Of Ingredients 5

1 Whole Rotisserie Chicken (white meat only deboned and shredded)
1/2 Cup Dried Apricots (cut in pieces)
1/2 Cup Dried Cranberries (Craisins)
1/2 Cup Walnuts, chopped
3/4 Cup Mayonnaise

Steps:

  • De-bone chicken and separate white meat from dark. Chop then shred white meat. Mix with other ingredients. Serve on bread or crackers I also used fat free mayonnaise which cut the calories. For extra zing use Lemon Pepper Chicken.

Tips:

  • To save time, use a rotisserie chicken or leftover cooked chicken.
  • If you don't have celery, you can substitute with chopped cucumber or jicama.
  • For a sweeter salad, use dried cranberries or raisins instead of grapes.
  • Add a tablespoon of honey or maple syrup to the dressing for a touch of sweetness.
  • If you're making the salad ahead of time, wait to add the nuts until just before serving so they don't get soggy.

Conclusion:

Fruit nut chicken salad is a delicious and refreshing dish that's perfect for lunch or a light dinner. It's easy to make and can be tailored to your own taste preferences. With its combination of sweet, savory, and crunchy ingredients, this salad is sure to be a hit with everyone.
