This is a terrific, sweet chicken salad with a Hawaiian flair. Great way to use up leftover chicken or turkey.

1/2 cup coconut
1/4 cup chopped nuts
1/2 cup crushed pineapple, drained

1 Whole Rotisserie Chicken (white meat only deboned and shredded)
1/2 Cup Dried Apricots (cut in pieces)
1/2 Cup Dried Cranberries (Craisins)
1/2 Cup Walnuts, chopped
3/4 Cup Mayonnaise

Steps:

  • De-bone chicken and separate white meat from dark. Chop then shred white meat. Mix with other ingredients. Serve on bread or crackers I also used fat free mayonnaise which cut the calories. For extra zing use Lemon Pepper Chicken.
