SIMPLE FRUIT JUICE GRANITA

Simple Fruit Juice Granita image

This is a very simple treat that can be used with your favorite fruit juices to make many different variations. My favorite variation has banana in it. It brings a bit of creaminess to the icy treat. The small bottles of prepackaged juice in the produce section are the perfect amount of juice for this recipe--just pick a flavor! Don't let the mixture freeze completely before you scrape. The secret is to scrape as it freezes.

4 cups chilled passion-fruit nectar or juice
3/4 cup chilled Champagne

  • In a saucepan bring sugar and water to a boil, stirring until sugar is dissolved, and cool syrup.

Granita may be made 2 days ahead and frozen, covered. Just before serving, scrape granita with a fork to lighten texture.
  • Scoop granita into serving bowls.

Tips:

  • Choose ripe, fresh fruits: The quality of your fruit will greatly impact the flavor of your granita. Opt for fruits that are in season and have a vibrant color.
  • Use a variety of fruits: Experiment with different fruits to create unique and flavorful granitas. Some popular combinations include berries, citrus fruits, tropical fruits, and melons.
  • Adjust the sweetness to your liking: The amount of sugar you add to your granita is a matter of personal preference. Start with a small amount and add more to taste.
  • Freeze the granita in a shallow container: This will help it freeze evenly and quickly.
  • Scrape the granita every 30 minutes: This will help break up the ice crystals and create a smooth, slushy texture.
  • Serve the granita immediately: Granita is best enjoyed fresh, so serve it as soon as it is ready.
