1 cup all-purpose flour
1 cup white sugar
1 egg
1 teaspoon baking soda
1 teaspoon vanilla extract
1 (16 ounce) can fruit cocktail
½ cup packed brown sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x9 inch square baking pan.
  • Combine the flour, white sugar, egg, baking soda, vanilla and undrained fruit cocktail. Mix until blended. Pour batter into the prepared pan and sprinkle the top with the brown sugar.
  • Bake at 350 degrees F (175 degrees C) for 40 minutes or until golden brown and firm.

1 (16 ounce) can fruit cocktail in light syrup, drained, juice reserved
1 (9 ounce) package yellow cake mix

Steps:

  • Preheat oven to 350 degrees F, then lightly coat the inside of a 9"x9" baking pan with cooking spray.
  • In a medium bowl, blend the reserved fruit cocktail juice & the cake mix, then gently fold in the fruit, before pouring into the prepared baking pan.
  • Bake 40 to 45 minutes or until the top is golden.
  • Serve warm, but refrigerate leftovers.

6 ounces lemon Jell-O gelatin
15 ounces fruit cocktail
1 (8 ounce) package cream cheese
1 (12 ounce) package Dream Whip

Steps:

  • Make lemon jello, use juice from fruit cocktail for part of liquid.
  • mash cream cheese and add to jello.
  • let set.
  • when jello begins to set add fruit cocktail and dream whip.
  • pour into a shallow dish.
  • put in refrigerator.

This is a super quick, super easy dessert to make. Three ingredients and two minutes of prep time is all it takes. Doesn't get any easier. I've used other items instead of fruit cocktail like canned pears, canned blueberries or canned cherries. I've also sprinkled coconut on top of the cake before baking which adds great flavor. Serve plain, with Cool Whip or your favorite ice cream.

2 (15 ounce) cans fruit cocktail (I use Del Monte Carb Clever to cut down on some of the sugar)
1 (18 ounce) box yellow cake mix
1/2 cup unsalted butter, melted

Steps:

  • Pre-heat oven to 350 degrees.
  • Melt one stick of butter in a microwave safe dish for 1 minute 40 seconds on 50% power.
  • Pour entire contents of fruit cocktail cans (juice and all) into a 8 X 11 glass pan that has been sprayed with cooking spray. Spread fruit cocktail evenly on bottom of pan.
  • Sprinkle box of yellow cake mix, evenly, over top of fruit cocktail. Do NOT mix cake mix and fruit cocktail. Use the back of a spoon to smooth out cake mix.
  • Drizzle melted butter over top of cake mix. (Cake mix does not need to be completely covered in butter).
  • (Optional - sprinkle a small amount coconut on top of the cake before baking, photo shows it with coconut).
  • Bake on 350 degrees for 45 minutes.
