2 cups fresh or frozen unsweetened sliced peaches, thawed
1 envelope unflavored gelatin
1/4 cup cold water
1/4 cup sugar
2 cups vanilla yogurt

Steps:

  • Place the peaches in a blender; cover and process until pureed. Set aside. , In a small saucepan, sprinkle gelatin over cold water; let stand for 1 minute. Stir in sugar. Cook and stir over low heat until gelatin and sugar are dissolved., In a large bowl, combine the yogurt, peach puree and gelatin mixture until blended. Pour into an ungreased 9-in. square dish. 5 medium peaches, peeled and diced
1/2 cup vanilla sugar
1 1/2 cups reduced-fat (2 percent) Greek yogurt
1/2 cup low-fat plain yogurt

Steps:

  • In a small saucepan, combine diced peaches and sugar. Bring to a simmer over medium heat and cook for 15 minutes until thickened - set aside to cool completely. In a large bowl, whisk yogurts and transfer to an ice cream maker. Mix according to the manufacturer's suggestions, until thick and frosty (about 10-12 minutes). Add peach mixture to the machine and continue to churn for an additional 5-10 minutes, until thick.
