Great to make ahead for a dinner party. Just like the old fashioned waldorf salad but freezable for a future occasion! Got this out of Freeze with Ease written in 1965. Prep time includes freezer time

2 eggs, slightly beaten
1/2 cup sugar
1/2 cup pineapple juice
1/8 teaspoon salt
1/4 cup lemon juice
1/2 cup celery, finely chopped
1/2 cup crushed pineapple, well drained
1/2 cup broken walnuts or 1/2 cup pecans
2 apples, unpeeled and finely chopped
1 cup heavy cream, whipped

Steps:

  • In the top of a double broiler combine the eggs, sugar, pineapple juice, salt and lemon juice.
  • Cook stirring constantly until thick.
  • Cool and add celery, pineapple, nuts and apple.
  • Gently fold in heavy cream.
  • Freeze in one large or 12 individual molds.
  • Serve frozen on lettuce.
  • Garnish, if desired with mayonnaise.

1 1/4 pounds Red Delicious Apples
5 ounces celery
3 ounces mayonnaise
2 ounces chopped walnuts
1/2 squeezed lemon, to taste
Garnish with: orange segments, berries, kiwi, small vegetable flowers

Steps:

  • Peel, core and medium dice the red delicious apples. Apples start with approximately 2 pounds of apple to yield 1 1/4 pounds of diced apple. Place in a mixing bowl and mix with the lemon juice. This will keep the apple from discoloring. Before dicing the celery, blanch it in boiling water for 60 seconds and cool it with cold water. This will bring out the sweet flavor and extend the salads shelf life. Combine diced apple, lemon juice, mayonnaise, celery and chill. Serve on a bed of lettuce topped with walnuts and add a simple fruit garnish. Traditionally this is also served with tiny sweet finger sandwiches. (Example: date nut bread and raspberry jam.)
  • Serve with: Boston or Romaine leaf lettuce .

3/4 cup low-fat buttermilk
1/4 cup plus 2 teaspoons low-fat mayonnaise
3 tablespoons chopped fresh chives
1 tablespoon plus 2 teaspoons apple cider vinegar
1 tablespoon sugar
1 lemon, juiced
Kosher salt and freshly ground black pepper
1 cup toasted walnuts, roughly chopped
8 ribs celery, sliced about 1/4 inch thick on the bias
2 Gala apples, skin on, cored and diced

Steps:

  • Whisk together the buttermilk, mayonnaise, chives, vinegar, sugar, lemon juice and 1/2 teaspoon each salt and pepper in a small bowl. Combine the walnuts, celery and apples in a separate large bowl. Pour three-quarters of the dressing over the celery-apple mixture and toss to coat. Let stand for 5 minutes at room temperature, then toss again. Adjust the seasoning as desired. Add the remaining dressing and toss again. Serve at room temperature.

1/2 cup sugar
1/2 cup pineapple juice
1/4 cup fresh lemon juice
1/8 tsp salt
1 1/3 cups heavy cream
1/2 cup mini marshmallows
1/2 cup red seedless grapes, cut into halves
1/2 cup crushed pineapple, drained
2 medium apples, diced with skin left on
1/2 cup diced celery
1/2 cup walnuts or pecans, roughly chopped
8 fresh cherries or maraschino cherries
8 sprigs of fresh mint

Steps:

  • In a sauce pan, combine the sugar, pineapple juice, lemon juice, and salt over med heat, stirring constantly until thick. Remove from heat and let cool.
  • Whip cream and fold it into the cooled syrup mixture. Stir in marshmallows, grapes, pineapples, apples, celery and nuts.
  • Spread mixture into an 8 by 8-inch pan and freeze until frozen throughout, at least 2 hours.
  • Remove the salad from freezer 5 minutes before serving. Then cut into 8 squares. Garnish with a cherry and a sprig of fresh mint.
