FROZEN FRUIT SALAD

Frozen Fruit Salad image

My husband's mother used to make him frozen fruit salad when he was a child, and this recipe is about as close to her's as you can get! It was a big winner all around our table. Perfect for brunches, luncheons, or any special occasion.

Time 25m

Number Of Ingredients 8

1 small carton of sour cream
1/2 c sugar
2 Tbsp lemon juice
1/4 c chopped maraschino cherries
1/2 c nuts
1 large can of crushed pineapple--drained
2 diced bananas
1 c cool whip

Steps:

  • 1. Stir first three ingredients together until creamy
  • 2. Add the rest of the ingredients
  • 3. Fold in the cool whip
  • 4. Pour ingredients into a loaf pan and freeze
  • 5. This salad freezes like an ice cube--I would recommend taking it out of the freezer for about 30-45 minutes before serving to let it soften a bit. (It also tastes better if it has softened) That way it will come out of the loaf pan easier another idea is to line the loaf pan with foil and just pull the foil/salad out of the pan

FROZEN FRUIT SOUR CREAM SALAD

Frozen Fruit Sour Cream Salad image

My Mom gave me a recipe box years ago. I treasure it because it has handwritten recipes from her and my late Nana (her mother). I do remember that my Mom got this recipe from Mrs. Barbara Taylor, our Winston-Salem neighbor, and served it over a leaf of lettuce (fancy presentation back then) in my youth. It's a delicious summer side.

Time 8h20m

Yield 6-12 frozen molds, 6-12 serving(s)

Number Of Ingredients 9

2 cups sour cream
3/4 cup sugar
1 teaspoon grated lemon rind
2 teaspoons lemon juice
1/8 teaspoon salt
1 (20 ounce) can crushed pineapple, drained
1 (20 ounce) can fruit cocktail, drained
1/2 cup chopped pecans
3 tablespoons maraschino cherries, drained and chopped

Steps:

  • Mix together and pour into molds (my Mom used tupperware ones and I have smaller ones). Note number of servings depend upon mold size.
  • Freeze (8 hour cook time is freeze time).
  • Thaw 15 minutes minutes before serving.
  • Serve in whatever elegant manner you determine and enjoy!

Tips:

  • Selecting the right fruit: Choose ripe, flavorful fruits that are free of blemishes. Frozen fruits are often picked at peak ripeness and flash-frozen to preserve their flavor and nutrients, making them an excellent option for this salad.
  • Thawing the fruit: If using frozen fruit, allow it to thaw slightly before adding it to the salad. This will help prevent the salad from becoming too watery.
  • Whipping the sour cream: For a lighter and fluffier texture, whip the sour cream until it forms soft peaks before folding it into the salad. This will incorporate air into the sour cream, making it lighter and more delicate.
  • Adding sweetener: The amount of sweetener you add will depend on the sweetness of the fruit and your personal preference. Start with a small amount and adjust to taste. Honey, maple syrup, and granulated sugar are all good options.
  • Chilling the salad: After assembling the salad, chill it for at least 30 minutes before serving. This will allow the flavors to meld and the salad to firm up.

Conclusion:

Frozen fruit sour cream salad is a refreshing and delicious side dish that is perfect for summer gatherings. It is easy to make and can be tailored to your liking by choosing different fruits, sweeteners, and nuts. Whether you are looking for a light and refreshing snack or a sweet and satisfying dessert, this salad is sure to please.
