Be mindful, though...it really freezes up and does take some time to thaw out enough to enjoy the full-bodied flavor. After all the times I've made it, though, I almost always forget to bring it out early as a salad. Sooo, once the meal is over I present it as dessert!!

1 (16 ounce) jar maraschino cherries, drained
1/4 cup cherry juice
1 (8 ounce) package cream cheese, softened
1 (20 ounce) can crushed pineapple
1 (11 ounce) can mandarin oranges, drained
2 1/2 cups mini marshmallows
1 (8 ounce) container whipped topping

Steps:

  • Drain cherries, reserving 1/4 cup juice; set aside.
  • Combine cream cheese and pineapple with juice in medium bowl; mix on medium speed 3-4 minutes.
  • Stir in oranges, cherries, and cherry juice.
  • Gently fold in marshmallows and whipped topping.
  • Spread evenly in 13x9x2 baking pan.

This is a wonderfully refreshing summertime freezer dessert, I usually prepare two of these, and keep one in the freezer for later. Plan ahead, this needs to freeze for 4 or more hours before serving. Prep time includes freezing time.

1 (3 ounce) box strawberry Jell-O gelatin dessert
1 cup boiling water
1 (6 ounce) container frozen pink lemonade concentrate
1 (8 ounce) container cool whip frozen whipped topping, thawed
1 (16 ounce) can peach slices, drained (can use canned pears, sliced, or use both if desired)
1 cup green seedless grape (sliced in half if desired)
1/4 cup maraschino cherry (without the juice)
2 large bananas, sliced 1 inch thick

Steps:

  • Prepare one 9x5-inch loaf pan.
  • In a large bowl, dissolve the Jello powder in 1 cup of boiling water; mix very well until no powder remains.
  • Add in the lemonade concentrate, and stir until melted.
