Pretty slices of this refreshing salad are dotted with colorful cherries for a festive look. The flavor is pleasant and not overly sweet like some frozen cherry recipes. Prepared in advance and frozen, it's a treat that fits into many different menus. I serve it throughout the year. -Gail Sykora, Menomonee Falls, Wisconsin

FROZEN FRUIT SALAD DESSERT

Frozen Fruit Salad Dessert image

Like Capital-One, I don't leave home without it. For family or church gatherings, there's always a couple of requests for this oh-so-easy salad/dessert. Be mindful, though...it really freezes up and does take some time to thaw out enough to enjoy the full-bodied flavor. After all the times I've made it, though, I almost always forget to bring it out early as a salad. Sooo, once the meal is over I present it as dessert!!

Time 4h

Yield 15-18 serving(s)

Number Of Ingredients 7

1 (16 ounce) jar maraschino cherries, drained
1/4 cup cherry juice
1 (8 ounce) package cream cheese, softened
1 (20 ounce) can crushed pineapple
1 (11 ounce) can mandarin oranges, drained
2 1/2 cups mini marshmallows
1 (8 ounce) container whipped topping

Steps:

  • Drain cherries, reserving 1/4 cup juice; set aside.
  • Combine cream cheese and pineapple with juice in medium bowl; mix on medium speed 3-4 minutes.
  • Stir in oranges, cherries, and cherry juice.
  • Gently fold in marshmallows and whipped topping.
  • Spread evenly in 13x9x2 baking pan.
  • Freeze until set.
  • Can be made one day ahead.

Tips:

  • Select ripe and fresh fruits: Use high-quality fruits that are ripe and in season for the best flavor and texture.
  • Chop fruits evenly: Cut fruits into uniform-sized pieces so they freeze and thaw evenly.
  • Use a variety of fruits: Combine different fruits to create a colorful and flavorful salad. Some popular choices include berries, melon, pineapple, and mango.
  • Add some sweetness: If desired, add a sweetener such as honey, maple syrup, or agave nectar to taste. You can also use flavored yogurt or fruit juice for a sweeter salad.
  • Freeze the salad in a single layer: Spread the salad out in a single layer on a baking sheet or in an airtight container before freezing. This will help the salad freeze evenly and prevent the pieces from sticking together.
  • Store the salad properly: Once frozen, transfer the salad to an airtight container and store it in the freezer for up to 3 months. When ready to serve, thaw the salad in the refrigerator or at room temperature until softened.

Conclusion:

Frozen fruit salad is a delicious and refreshing treat that is perfect for any occasion. It is a healthy and convenient way to enjoy your favorite fruits all year long. With a few simple tips, you can easily make a delicious and nutritious frozen fruit salad at home. Experiment with different fruits and flavors to create your own unique salad. Enjoy!
