8 tablespoons unsalted butter, one stick
1 1/2 cups bittersweet chocolate chips, 12 ounces
16 ounces cream cheese, softened to room temperature
1 1/2 cups sugar
four large eggs
2 teaspoons pure vanilla extract
1 cup unbleached flour
1/4 teaspoons salt

Steps:

  • 1. grease a 9 x 9" baking pan with butter. Dust with flour and tap out the excess. Preheat the oven to 350°. Melt the butter and chocolate in a small pan over low heat, stirring frequently, until melted. Set aside to cool.
  • 2. Beat the cream cheese and 1/4 cup of the sugar in a medium bowl until smooth. Beat in one egg and set the mixture aside.
  • 3. Place the remaining 1 1/4 cups of sugar in a large bowl and beat in the remaining three eggs, one at a time until smooth. Add the vanilla and chocolate mixture and mix until well blended.
  • 4. Measure the flour and salt and then sift together directly into the chocolate batter. Mix the batter gently until well combined and no trace of the dry ingredients remains
  • 5. spread three quarters of the chocolate batter evenly into prepared baking pan. Pour the cream cheese mixture evenly over the top of the chocolate layer in the pan. Then gently pour the remaining chocolate batter over the top of the cream cheese layer, spreading evenly with a spatula.
  • 6. Dip a rounded edged knife in the pan and lift straight up , creating a marbled effect in the batter. Repeat to create a pattern, either random or in rows.
  • 7. Bake for 45 minutes or until toothpick inserted in center comes out clean or with only crumbs, not batter on it. Remove from the oven and cool on a rack for 1 1/2 hours. Freeze brownies in the pan for 45 minutes. Wrap any uneaten pieces with plastic or foil and return to the freezer. Makes 12 to 16 brownies.

1 cup plus 2 tablespoons all-purpose flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon salt
8 ounces semisweet or bittersweet chocolate, chopped
4 ounces cream cheese, room-temperature
1 1/2 cups sugar
4 large eggs

Steps:

  • Preheat oven to 350 degrees. Brush a 9-inch square baking pan with butter. Line bottom and two sides with a strip of parchment paper, leaving a 2-inch overhang on the two sides. Butter paper, and set pan aside. In a small bowl, whisk 1 cup flour, cocoa, baking powder, and salt; set aside.
  • Place 8 tablespoons (1 stick) butter and chocolate in a large heat-proof bowl set over (not in) a saucepan of gently simmering water. Heat, stirring occasionally, until smooth, 2 to 3 minutes; remove bowl from pan. Add 1 1/4 cups sugar; mix to combine. Add 3 eggs, and mix to combine. Add flour and cocoa mixture; mix just until moistened (do not overmix).
  • Prepare cream-cheese mixture: Whisk cream cheese with 2 tablespoons room-temperature butter. Whisk in 1/4 cup sugar, 1 egg, and 2 tablespoons all-purpose flour. Alternately spoon chocolate batter and cream-cheese mixture into pan; with the tip of a paring knife, swirl to marble.
  • Bake until a toothpick inserted in center comes out with a few moist crumbs attached, 50 to 60 minutes. Cool in pan for 30 minutes. Using paper overhang, lift brownies out of pan; transfer to a rack to cool completely (still on paper). On a cutting board, using a dampened serrated knife, cut into 16 squares.
