Time 1h

Number Of Ingredients 8

1/2 cup unsalted butter, melted (1 stick)
1 cup light brown sugar, packed
1 large egg
2 teaspoons vanilla extract
1 cup all-purpose flour
1/4 teaspoon salt, optional
3/4 to 1 cup semi-sweet chocolate chips
1 cup cherries (fresh or frozen)*

Steps:

  • Preheat oven to 350F. Line an 8-by-8-inch pan with aluminum foil, spray with cooking spray; set aside.
  • In a medium microwave-safe bowl, melt the butter, about 60 seconds.
  • To the melted butter, add the brown sugar and stir to combine.
  • Add the egg, vanilla, and stir to combine. Add the flour, salt, and stir until just combined, taking care not to over mix or the blondies will be tough.
  • Fold in chocolate chips, fruit (I don't halve the cherries: I like them chunky and big), and pour batter into prepared pan, smoothing it lightly with a spatula or offset knife if necessary.
  • Bake for 27 to 32 minutes, or until edges begin to slightly pull away from sides of pan and center is set.**
  • Allow bars to cool for at least 1 hour before slicing and serving. Blondies can be stored in an airtight container at room temperature or in the refrigerator for up to 1 week or frozen for up to 3 months.

CHERRY-CHOCOLATE LOAF

Cherry-Chocolate Loaf image

I am very proud of my banana bread recipe, which is why I adapted it into this amazing cherry-chocolate loaf. While cherries really aren't anything like bananas, this really did work out extremely well--this loaf is a delicious option for breakfast, brunch, or dessert.

Time 1h50m

Yield 12

Number Of Ingredients 15

1 teaspoon unsalted butter
2 cups all-purpose flour
1 teaspoon kosher salt
1 teaspoon baking powder
½ teaspoon baking soda
½ cup unsalted butter, softened
1 cup white sugar
2 large eggs, at room temperature
¼ cup plain yogurt
¼ teaspoon vanilla extract
2 cups pitted cherries
½ cup dark chocolate chunks
½ cup chopped walnuts
¼ cup powdered sugar
3 teaspoons milk, or more as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x4-inch loaf pan with 1 teaspoon butter and reserve.
  • Whisk flour, salt, baking powder, and baking soda together in a bowl.
  • Cream 1/2 cup butter and sugar together in another bowl with a spatula or an electric mixer until smooth and creamy. Beat in eggs one at a time with a whisk or an electric mixer, fully blending in the first egg before adding the next. Stir in yogurt and vanilla extract.
  • Chop pitted cherries coarsely with a knife, or by pulsing on and off a few times in a food processor. Add to the wet ingredients along with the chocolate chunks and chopped walnuts. Stir briefly to combine. Batter may look curdled, but don't worry.
  • Pour in the flour mixture and mix with a spatula until all the flour has disappeared. Transfer batter into the prepared loaf pan, making sure to smooth the top evenly and fill in the corners. Tap pan on the counter to release any air pockets.
  • Bake in the preheated oven until nicely browned and a toothpick inserted into the center comes out clean, about 1 hour. Let bread rest in the pan for 15 minutes before removing to a wire rack.
  • While bread is resting, combine powdered sugar and milk in a bowl for icing, adding more milk as needed to reach a thin, runny consistency.
  • Brush icing over loaf, allowing to drip down the sides. Let cool completely before slicing and serving, about 20 minutes more.

Tips:

  • Thaw Frozen Cherries Properly: Before using frozen cherries, thaw them in the refrigerator overnight or at room temperature for several hours. This will prevent the cherries from releasing too much liquid into the soufflé batter.
  • Use Fresh Lemon Juice: Fresh lemon juice adds a bright and tangy flavor to the soufflé. Avoid using bottled lemon juice, as it can have a bitter taste.
  • Whip Egg Whites Until Stiff Peaks Form: The egg whites are what give the soufflé its light and airy texture. Make sure to whip them until they form stiff peaks before folding them into the batter.
  • Gently Fold Egg Whites into Batter: When folding the egg whites into the batter, use a spatula and fold gently until just combined. Overmixing can deflate the egg whites and result in a dense soufflé.
  • Bake Soufflé Immediately: Once the soufflé batter is ready, bake it immediately. Delaying baking can cause the soufflé to deflate.
  • Serve Soufflé Immediately: Soufflés are best served immediately after baking, while they are still light and airy. The soufflé will start to deflate as it cools, so don't wait too long to enjoy it.

Conclusion:

The Frozen Cherry and Chocolate Chip Soufflé is a delicious and impressive dessert that is perfect for any occasion. With its light and airy texture, sweet and tangy flavor, and the addition of chocolate chips and cherries, this soufflé is sure to be a hit. Whether you are a seasoned baker or a beginner, this recipe is easy to follow and will yield delicious results. So preheat your oven and get ready to create a culinary masterpiece!
