Time 4h10m

Yield 6 popsicles

Number Of Ingredients 7

2 cups milk
1/2 cup heavy cream
1 (3 1/2 ounce) package instant white chocolate pudding and pie filling mix or 1 (3 1/2 ounce) package vanilla instant pudding mix
1 cup strawberries or 1 cup raspberries, fresh or frozen
3 -5 drops food coloring (optional)
paper cups
wooden popsicle sticks

Steps:

  • In a blender, combine milk, heavy cream and pudding mix. Blend until smooth.
  • For blue or pink pops, add food colouring. Blend until combined.
  • Let stand for 5 minutes, and stir in berries.
  • Pour into paper cups.
  • Cover with foil and cut a slit in foil to insert stick.
  • Freeze for 4 hours or overnight. Remove paper cup.

Tips:

  • For a creamier texture, use full-fat coconut milk instead of light coconut milk. You can also use almond milk or skim milk if you prefer.
  • If you don't have a popsicle mold, you can use small paper cups instead. Just make sure to poke a hole in the bottom of each cup before freezing so that the popsicles can be easily removed.
  • To make the popsicles even more fun, add some sprinkles, chocolate chips, or chopped nuts to the mixture before freezing.
  • If you're using fresh berries, be sure to wash and dry them thoroughly before using. Frozen berries can be used without thawing.
  • Popsicles can be stored in the freezer for up to 2 weeks. To serve, simply remove them from the freezer and let them thaw for a few minutes before eating.

Conclusion:

Frozen berry pudding pops are a delicious and refreshing snack that are perfect for summer. They're also a great way to use up leftover berries.
