Tips:

  • Use fresh lemons: Freshly squeezed lemon juice yields the best flavor and aroma in these lemon squares. Aim for about 1/2 cup of juice per recipe.
  • Don't overmix the batter: Overmixing can result in a tough crust and crumbly filling. Mix the batter just until the ingredients are combined.
  • Chill the dough before baking: Chilling the dough before baking helps to prevent it from spreading too much in the oven. This will ensure a more uniform and even bake.
  • Use a water bath for a creamy filling: Baking the lemon squares in a water bath creates a moist and creamy filling. Make sure the water level comes halfway up the sides of the baking dish.
