32 oz frozen berry medley
32 oz frozen fruit mix
2 tablespoons lemon or lime juice
ΒΌ cup honey

Steps:

  • Place frozen fruit in a large mixing bowl.
  • Add lemon juice and honey. Stir well. The honey will get thick and sticky but once the fruit thaws, it will combine with the juice to make a delicious dressing.
  • Cover the bowl with saran wrap and let it stand in room temperature for about 1 hour.
  • Stir everything together just before serving.
  • Garnish with chopped mint leaves, if desired.

12 ounces frozen orange juice concentrate, thawed
5 -6 bananas, sliced
20 ounces crushed pineapple
20 ounces sliced peaches
10 ounces frozen sliced strawberries
1 1/2 cups sugar
1 cup water

Steps:

  • Prepare orange juice according to container directions in a large serving bowl; stir in bananas, crushed pineapple, peaches and strawberries, set aside.
  • Add sugar and water to a saucepan; bring to a boil. Pour over fruit; stir.
  • Freeze 24-48 hours in freezer-proof bowl; stir 2-3 times as it freezes.

My husband's mother used to make him frozen fruit salad when he was a child, and this recipe is about as close to her's as you can get! It was a big winner all around our table. Perfect for brunches, luncheons, or any special occasion.

1 small carton of sour cream
1/2 c sugar
2 Tbsp lemon juice
1/4 c chopped maraschino cherries
1/2 c nuts
1 large can of crushed pineapple--drained
2 diced bananas
1 c cool whip

Steps:

  • 1. Stir first three ingredients together until creamy
  • 2. Add the rest of the ingredients
  • 3. Fold in the cool whip
  • 4. Pour ingredients into a loaf pan and freeze
  • 5. This salad freezes like an ice cube--I would recommend taking it out of the freezer for about 30-45 minutes before serving to let it soften a bit. (It also tastes better if it has softened) That way it will come out of the loaf pan easier another idea is to line the loaf pan with foil and just pull the foil/salad out of the pan
