This frozen cranberry salad has been a staple on our Thanksgiving table for over 40 years. This creamy, frozen concoction made with crushed pineapple, cream cheese and walnuts, is that good!

Categories     Salads

Time 20m

Number Of Ingredients 6

1 bag fresh cranberries
1 1/2 c sugar
8 oz cream cheese
½ c walnuts or pecans, chopped
8 oz can crushed pineapple-drained
½ of a regular sized container Cool Whip or about 3 cups, though this is personal preference. If you want it creamier you can add more. Or about 3 c sweetened whipped cream.

Steps:

  • Chop cranberries finely in food processor. Empty into a big bowl. Add sugar to cranberries and stir well.
  • Chop nuts in processor. Add to cranberries.
  • Whip cream cheese in processor and add to bowl. Stir in drained, crushed pineapple. Fold in Cool Whip or whipped cream.
  • Freeze in lightly greased pans that have been greased with Pam or canola oil.
  • I use 1- 9 x 5 or 2- 8 x 4 loaf pans, or muffin tins that have been line with paper liners.
  • When ready to serve, let thaw for about 10 minutes before unmolding. Slice into pretty slices OR just serve the individual ones from the muffin pan on a rimmed tray.

CRANBERRY SQUARES

Cranberry Squares image

Real quick and easy to make! I got this recipe from an acquaintance at a boardgame night. The original recipe called for walnuts, but I think pecans are a more complementary flavor. These cranberry bars are delicious, with a delightful balance of sweet and tart. Don't count on leftovers - these moist squares get gobbled right up!

Provided by Divaconviva

Time 55m

Yield 24 Bars

Number Of Ingredients 6

1 1/2 cups flour
1 1/2 cups sugar
1 cup butter, Softened
2 eggs, Beaten
2 cups raw cranberries, left whole
1 cup pecans, Chopped

Steps:

  • Preheat oven to 325 degrees.
  • Grease a 9" x 13" Pan.
  • Mix the butter with the sugar, and add the eggs and flour.
  • Stir in the cranberries and pecans.
  • Pour batter into greased pan, spreading out evenly.
  • Bake at 325 degrees for 45 - 50 minutes.
  • Cool. Cut into squares. At Christmas-time, you can add chopped green candied cherries. These also freeze well.

  • For a sweeter salad, use more cranberries and sugar. For a tarter salad, use fewer cranberries and less sugar.
  • If you are using fresh cranberries, be sure to wash them thoroughly before using them.
  • To make the salad ahead of time, prepare it up to 24 hours in advance and store it in the refrigerator. When you are ready to serve, let it come to room temperature for about 30 minutes.
  • This salad is also a great way to use up leftover cranberries from Thanksgiving or Christmas dinner.
  • Serve this salad chilled or at room temperature. Garnish with additional cranberries, chopped nuts, or whipped cream, if desired.

Conclusion:

Cranberry salad squares are a classic holiday dessert that is always a hit with guests. They are easy to make and can be prepared ahead of time, making them a great option for busy hosts. With their sweet and tart flavor, these squares are sure to be a hit at your next holiday gathering.
