FROSTED PUMPKIN BARS

Frosted Pumpkin Bars image

I grew up making these...it's actually like a cake..really moist and easy to make! you need a large sheet cake pan to make.

Provided by strawberryjane

Categories     Dessert

Time 55m

Yield 1 sheet cake pan

Number Of Ingredients 15

4 eggs, beaten
1 cup salad oil
2 cups sugar
1 cup pumpkin
1/2 teaspoon salt
2 teaspoons cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
2 cups flour
1 cup chopped nuts or 1 cup raisins (I use pecans..never tried the raisins) (optional)
3 ounces cream cheese, softened
6 tablespoons butter or 6 tablespoons margarine, softened
3/4 lb powdered sugar
1 teaspoon vanilla
1 teaspoon milk (more as needed)

Steps:

  • Combine all ingredients and pour into a greased and floured sheet cake pan.
  • Bake at 350 degrees for 20-25 minutes.
  • Frosting: Mix ingredients together and spread on warm pumpkin bars.

Nutrition Facts : Calories 7766, Fat 408.4, SaturatedFat 108.6, Cholesterol 1123.5, Sodium 4741.3, Carbohydrate 981.2, Fiber 22.1, Sugar 743.7, Protein 83.3

Tips:

  • Use fresh pumpkin purée: Fresh pumpkin purée has a more intense flavor than canned purée. To make your own purée, simply roast a pumpkin until tender, then scoop out the flesh and blend it until smooth.
  • Don't overmix the batter: Overmixing the batter will make the squares tough. Mix just until the ingredients are combined.
  • Bake the squares until a toothpick inserted into the center comes out clean: This will ensure that the squares are cooked through.
  • Let the squares cool completely before frosting them: This will help to prevent the frosting from melting.
  • Use a cream cheese frosting: Cream cheese frosting is a classic pairing for pumpkin squares. It's rich, creamy, and perfectly complements the pumpkin flavor.
  • Garnish the squares with pumpkin seeds or chopped nuts: This will add a festive touch and make the squares even more delicious.

Conclusion:

Pumpkin squares are a delicious and festive treat that are perfect for fall. They're easy to make and can be tailored to your own taste preferences. So next time you're looking for a sweet and satisfying snack, give pumpkin squares a try.
