PINEAPPLE FROSTED POUND CAKE

Pineapple Frosted Pound Cake image

This is so easy to make and so delicious. You buy the pound cake--fresh or frozen (or if you are feeling very ambitious, you could make it from scratch). I did serve this frosting on Recipe #108059 and it was great, as that cake is a little like pound cake but in bigger form. Now, I WILL TELL YOU--I don't ever frost the cake; I make the frosting and put big dollops of frosting on the cut pound cake. That is easier than the other way and you get sooooo much more of the frosting. But either way it is good.

###
Tips
  • Use ripe pineapple: Using ripe pineapple ensures a sweeter and juicier cake. Look for pineapples that have a golden yellow color and a sweet aroma.
  • Drain the pineapple well: Make sure to drain the pineapple thoroughly to prevent excess moisture in the cake. This will help achieve a perfect texture and prevent the cake from becoming soggy.
  • Cream the butter and sugar until light and fluffy: This step incorporates air into the mixture, resulting in a light and airy cake. Creaming the butter and sugar together also helps dissolve the sugar crystals, creating a smooth and creamy batter.
  • Gradually add the eggs: Adding the eggs one at a time allows them to incorporate more easily into the batter and prevents the mixture from curdling.
  • Mix the dry ingredients separately: Mixing the dry ingredients (flour, baking powder, and salt) separately ensures even distribution and prevents lumps in the batter.
  • Alternately add the dry ingredients and pineapple mixture: Adding the dry ingredients and pineapple mixture alternately helps prevent overmixing and gluten development, resulting in a tender and moist cake.
  • Fold in the whipped egg whites: Folding in the whipped egg whites gently incorporates air into the batter, creating a light and fluffy texture.
  • Bake the cake until a toothpick inserted into the center comes out clean: This ensures that the cake is fully baked and prevents underbaking.
  • Let the cake cool completely before frosting: Allowing the cake to cool completely prevents the frosting from melting and ensures a smooth and even application.
  • Use a cream cheese frosting: Cream cheese frosting pairs perfectly with the tangy pineapple flavor and adds a rich and creamy texture to the cake.
