1 lb grapes, mix of red, green and black if desired
2 large egg whites
scant 1/8 tsp lemon juice, fresh
2 c sugar or superfine sugar

Steps:

  • 1. Wash grapes and allow to dry. Snip into small clusters. Whisk egg whites until they run off the whisk in a thin stream; they should remain clear and foamy, not stiffly beaten. Place sugar in its own shallow bowl. Dip each grape cluster into the egg white, shaking off excess.
  • 2. Next dip the grapes in the sugar and place on oven tray covered with parchment paper. Leave in a warm place to dry. The grapes can be prepared 2 or 3 weeks before use and can be kept in airtight bags in freezer.
  • 3. I use these frosted grapes as a garnish when I am catering. A friend just called and asked me how to prepare them and I thought I would share with y'all too.

1/3 cup egg whites (from about 2 eggs)*
5 drops (scant 1/8 teaspoon) fresh lemon juice
2 cups granulated sugar

Steps:

  • At least 3 hours and up to 7 days before serving, remove the grapes from their stems and place in the freezer. When ready to serve, whisk the egg whites with the lemon juice in a large bowl until frothy. Put the sugar in another bowl.
  • Drop the grapes into the bowl of egg whites, then pour the contents of the bowl through a strainer to drain the liquid. Dump the grapes onto a paper towel and roll them around until most of the excess egg white has been absorbed. Working in batches, add the grapes to the sugar and shake them around to coat.
