1/2 cup sugar
1/2 cup packed brown sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
1-3/4 cup all-purpose flour
1-1/2 teaspoons baking powder
2 cups shredded zucchini
1 cup sweetened shredded coconut
3/4 cup chopped walnuts
FROSTING:
2 cups confectioners' sugar
1 teaspoon ground cinnamon
2 tablespoons butter, melted
1 teaspoon vanilla extract
2 to 3 tablespoons whole milk

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour and baking powder; gradually add to the creamed mixture. Stir in zucchini, coconut and nuts. 2 c powdered sugar (this is the frosting)
1 tsp cinnamon
2 Tbsp butter, melted
1 tsp vanilla
2 Tbsp milk
