FROG IN A HOLE
I used to fix this for my sweetie when he would drive up to see me. It looks special, but you don't have to spend a lot of time in the kitchen to pull it off. This would also be a nice light supper. You can add cooked asparagus, cripy bacon, jalepenos, mushrooms, cooked sausage, or even bell peppers. I have pictured 3 eggs...

Steps:
- 1. Set burner to med high, and melt the butter and oil. I like teflon for this.
- 2. When hot saute the onion til translucent, add whatever extras you are putting in now like peppers, and cook til soft, or heated well, then add potatoes evenly,
- 3. Leave the pan alone. As Elton says 'Just walk away". Leave the pan alone until the potatoes are nice and browned. If you mess with the potatoes before they are crispy, they just won't brown.
- 4. When browned and crispy, turn over, and continue to cook until the potatoes are starting to brown on that side.
- 5. Make 4 wells in the hash browns, making sure you have good space so eggs have good contact with the bottom of the pan.
- 6. Crack one egg in each hole, salt and pepper, cover and continue to cook until eggs are soft set.
- 7. Cover each egg with a slice of cheese, cover again and allow cheese to melt.
TOAD IN THE HOLE
American Toad in a hole is one of the first recipes I had my children prepare when they were learning to cook. Much easier than the European version, this fun egg-in-a-hole is sure to please. My "little ones" are now grown (and have advanced to more difficult recipes!), but this continues to be a traditional standby in my home and theirs. -Ruth Lechleiter, Breckenridge, Minnesota

Steps:
- Spray a small pan with non-stick cooking spray.
- Cut a hole in the middle of the bread.
- Put the bread in the pan on medium/high heat for about a minute each side.
- Crack the egg into the hole in the bread and turn until egg is cooked.
- *The following are optional!*.
- While the egg is cooking you can sprinkle on the cheese. I like the cheese kind of crispy so I put it on almost right after I crack the egg. If you'd like the cheese a little more runny you should probably wait until it's almost done or even after you take it off the heat.
- You can toast and/or butter the bread lightly before cooking if you'd like but it's tasty either way.

Steps:
- Take each slice of bread and remove a hole two inches in diameter from the center. A jelly jar lid works very well as a quick discard for the center. Using a pancake griddle or a large teflon pan, heat one ounce of clarified butter over medium heat. Toast each slice of bread on one side for three minutes. As you flip each slice of bread, carefully crack an egg through the hole and saute the egg inside. When the egg sets on one side, but the yolk is still soft, turn the toast over, careful not to crack the yolk. Saute for an additional two minutes. While the eggs are cooking, in a mixing bowl season tomato slices and shaved onions with olive oil, red wine vinegar, salt and pepper. For the presentation, stack tomatoes and onions in one corner of the plate. Lean the frog in the hole against the tomatoes and garnish with a rosette of three slices of smoked salmon.

I have fond memories of my grandmother's Yorkshire pudding wrapped around sausages, a puffy dish my kids called "the boat." Slather it with butter and maple syrup. -Susan Kieboam, Streetsboro, Ohio

Tips:
- Choose the right bread: Thick, firm bread, such as sourdough or French bread, works best for frog in a hole. The bread should be able to hold its shape when the egg is poured into the center.
- Use fresh eggs: Fresh eggs will give you the best results. Older eggs may be more likely to break when you crack them into the bread.
- Season the egg: Before you pour the egg into the bread, season it with salt and pepper. You can also add other seasonings, such as herbs or cheese.
- Cook the frog in a hole over medium heat: This will help to prevent the bread from burning. Cook the frog in a hole until the egg is cooked through and the bread is golden brown.
- Serve the frog in a hole immediately: Frog in a hole is best served hot and fresh out of the pan. You can garnish it with parsley or chives.
Conclusion:
Frog in a hole is a quick and easy breakfast or brunch dish that is perfect for a busy morning. It is also a fun and creative way to use up leftover bread. With its simple ingredients and delicious flavor, frog in a hole is a dish that the whole family will enjoy.
