1/2 cup chopped ham
1 teaspoon coarse salt
1/4 teaspoon ground pepper

Steps:

80g chestnut mushrooms , sliced
50g ham , diced
80g bag spinach
4 medium eggs , beaten
1 tbsp grated cheddar

Steps:

  • Heat the grill to its highest setting. Heat the oil in an ovenproof frying pan over a medium-high heat. Tip in the mushrooms and fry for 2 mins until mostly softened. Stir in the ham and spinach, and cook for 1 min more until the spinach has wilted. Season well with black pepper and a pinch of salt.

1 large onion, sliced
3/4 teaspoon kosher salt
Freshly ground black pepper
8 large eggs
1/4 cup milk
1 cup diced ham
1 tablespoon chopped fresh herbs, like parsley, thyme, or dill
1 cup grated Swiss or cheddar cheese

Steps:

  • Position a rack about 8 inches from the broiler and preheat.
  • Melt the butter in a medium non-stick skillet over medium heat. Add the onions and season with 1/2 teaspoon salt and some pepper. Cook, stirring occasionally, until the onions get very soft, about 15 minutes. Meanwhile, whisk the eggs and milk in a medium bowl with the remaining 1/4 teaspoon salt and some pepper until smooth.
