Great for breakfast, lunch, or dinner! Feel free to experiment with this original recipe by me. Yummy sauteed meat, potatoes, veggies, with eggs. Ingredient measures are approximate. I had to guess how much I used as I put things in as I went. Love an ingredient, ADD MORE! Don't like one much, ADD LESS! Very versatile recipe.

2 tablespoons unsalted butter
1 large onion, sliced
3/4 teaspoon kosher salt
Freshly ground black pepper
8 large eggs
1/4 cup milk
1 cup diced ham
1 tablespoon chopped fresh herbs, like parsley, thyme, or dill
1 cup grated Swiss or cheddar cheese

Tips for Making a Perfect Frittata

  • Use a good quality non-stick skillet. This will help to prevent the frittata from sticking and will make it easier to flip.
  • Make sure the eggs are at room temperature. This will help them to cook evenly.
  • Don't overbeat the eggs. Overbeaten eggs will make the frittata tough.
  • Use a variety of fillings. This will make the frittata more flavorful and interesting.
  • Cook the frittata over medium heat. This will help to prevent it from burning.
  • Don't flip the frittata too soon. Wait until the bottom is golden brown and the top is set before flipping.
  • Let the frittata cool slightly before serving. This will help it to hold its shape.
