1 cup dried green split peas
1 cup dried lentils
1/2 cup dried pearl barley
1/3 cup beef granules or 1-2 beef bouillon cubes
1/4 cup dried minced onions
2 teaspoons Italian Seasoning
1/4 cup uncooked white rice
1-2 bay leaves
1/2 cup uncooked small pasta, I used Ditalini (place in a baggie so it's easy to remove from the jar)
3 quarts of water (when ready to make soup)
Salt and Pepper to taste

Steps:

  • Grab a quart (32-ounce) mason jar to layer the ingredients above. First of all, put the pasta in a baggie as stated. Place the seasonings in a small bag so you can place them under the lid after filling the jars with the other ingredients. Start with the minced onions, the green split peas, dried barley, lentils, rice, ending with pasta on top in the bag. The seasoning bag will go on top of the pasta bag.

  • To avoid the sifting of seasonings through the beans, layer ingredients in the jar in this order: onion, ½ cup split peas, rice, ½ cup lentils, beef granules, ½ cup split peas, barley, ½ cup lentils, Italian seasoning, and pasta. 1/4 cup medium pearl barley
1/2 cup dried lentils
1/4 cup dried minced onion
2 teaspoons Italian seasoning
1/2 cup uncooked long grain rice
1/2 cup uncooked alphabet pasta or other small pasta
ADDITIONAL INGREDIENTS:
1 pound ground beef (90% lean)
3 quarts water
1 can (28 ounces) diced tomatoes, undrained

Steps:

  • In a 1-1/2-pint jar, layer the first seven ingredients in the order listed. Wrap pasta in a small sheet of plastic wrap; add to jar. Seal tightly. Store in a cool, dry place for up to 3 months., To prepare soup: Remove pasta from jar and set aside. In a Dutch oven over medium heat, cook the beef until no longer pink; drain. Add the water, tomatoes and soup mix; bring to a boil. Reduce heat; cover and simmer for 45 minutes. Stir in the reserved pasta; cover and simmer for 15-20 minutes or until the pasta, peas, barley and lentils are tender.

½ cup uncooked twist macaroni
¼ cup barley
½ cup dry lentils
⅓ cup long-grain white rice
1 cup uncooked tri-color spiral pasta

Steps:

  • Use a canning funnel or any funnel that has about a 2-inch neck. This will make it easier to fill the jar with the ingredients. Be sure to use a wide-mouth, 1-quart canning jar.
  • Layer ingredients in the order given: bouillon, onion flakes, split peas, small shape pasta, barley, lentils, rice, and enough tricolor spiral pasta to fill jar.
  • Attach tag with cooking instructions: In large kettle, brown 1 pound ground beef or stew beef cut into bite-size pieces in a little olive oil. Remove tricolor pasta from top of jar and reserve. Add the rest of the jar contents to the kettle with 12 cups water. Let come to a boil and simmer 45 minutes. Add tricolor pasta and simmer 15 minutes more.
