QUICK AMISH FRIENDSHIP BREAD OR MUFFINS (NO STARTER REQUIRED)
I love this bread and I had a craving for it, but didn't want to wait the month it took for the starter to be ready, so, I modified it a bit. It might not be quite as tasty as the original, but it's great if you want it in a hurry! I like to use butterscotch pudding for a different, but really nice flavor! Hope you enjoy!

Steps:
- Mix "starter" ingredients together.
- Mix oil, milk, eggs, and vanilla with the "starter".
- In a separate bowl, mix flour, sugar, baking powder, cinnamon, salt, baking soda, vanilla pudding mix, and nuts.
- Add to liquid mixture and stir thoroughly.
- Pour into two large well-greased 9x5 inch loaf pans, one Bundt pan, or 48 muffin tins.
- Bake at 325F for one hour or until done (muffins will take only 30-35 minutes) and enjoy!
OATMEAL BRAN MUFFINS (AMISH FRIENDSHIP BREAD STARTER)
These are great low fat, healthy muffins that use Amish Friendship Bread Starter (yes, the gift that keeps on giving. . .I swear this stuff multiplies). Feel free to add nuts, raisins, cranberries, cinnamon, vanilla, etc. I make my starter with whole wheat flour, so I go ahead and use cake flour in this recipe to lighten it up a bit. I also use carrot baby food in place of the applesauce to healthify it a bit more :)

- 1. 1 cup Amish friendship batter * 2 cups flour 3/4 cup oil 1 tsp baking soda 2 tsp baking powder 1 cup sugar 3 eggs 1-1/2 tsp cinnamon 2 tsp vanilla Stir Well. Add: 1 cup nuts, chopped OPTIONAL 1 cup apples, chopped 1 cup raisins, or 1 cup blueberries Mix Well. Put into muffin tins well greased if not using liners. Sprinkle with topping on each muffin and bake at 350 degrees F for 15-20 minutes or until done.
- 2. TOPPING 1 cup brown sugar 1/2 cup flour 1/4 cup margarine Mix well and sprinkle over tops of muffins before baking.

- Preheat the oven to 350 degrees F (175 degrees C). In a small bowl, stir together 1/4 teaspoon of cocoa and 1/4 cup of sugar. Grease 10 cups of a muffin tin, and sprinkle each cup with some of the sugar mixture to coat the bottom and sides.
- In a large bowl, stir together the flour, 1/2 cup of sugar, unsweetened cocoa powder, salt, baking soda, and baking powder. Pour in the friendship starter, egg, oil, and vanilla; mix until well blended. Spoon the batter into the prepared muffin cups, filling each one about 1/2 full.
