It might not be quite as tasty as the original, but it's great if you want it in a hurry! I like to use butterscotch pudding for a different, but really nice flavor! Hope you enjoy!

BLUEBERRY FRIENDSHIP BREAD OR BUNDT CAKE (COFFEECAKE)

Blueberry Friendship Bread or Bundt Cake (Coffeecake) image

Another way to use your Amish Friendship Bread Starter. If you don't have starter, use Recipe #153 to start the process. You can add a simple glaze of 1/2 cup confectioner's sugar mixed with 1-2 Tbls. of milk, or you can leave it plain. Can be used as a dessert or coffeecake. In response to the 1-star reviews: I'm not sure why people are having problems with the recipe. It is just an adaptation of Recipe #60676. I've made it numerous times without any problems (as you can see in the photos). There isn't any added sugar because the sugar is in the starter.

AMISH FRIENDSHIP BREAD - NO STARTER

Amish Friendship Bread - No Starter image

We're big fans of Amish Friendship Bread and really liked this no starter version. This bread is made with pantry ingredients. It's got the texture of banana bread and it's filled with a nice cinnamon taste. Not overly sweet, it will be lovely with a cup of tea or coffee for an afternoon treat. It's an easy recipe kids can help...

STARTER
3/4 c sugar
3/4 c milk
3/4 c all-purpose flour
BREAD
1 c oil
1/2 c milk
3 large eggs
1 tsp vanilla extract
2 c all-purpose flour
1 c sugar
1 1/2 tsp baking powder
2 tsp cinnamon
1/2 tsp salt
1/2 tsp baking soda
1 pkg instant vanilla pudding, 5.1 oz
1 c finely chopped nuts (optional)

Steps:

  • 1. Preheat oven to 325. Combine all "starter" ingredients in mixing bowl; mix.
  • 2. Add in oil, milk, vanilla, and eggs.
  • 3. In a separate bowl, mix together flour, sugar, salt, cinnamon, baking powder, baking soda, pudding mix, and (optional) nuts.
  • 4. Add to the liquid mixture and stir well.
  • 5. Pour into Bundt pan, muffin pan (makes approx 48) or 2 greased 9x5 in. loaf pans.
  • 6. Bake at 325 for 1 hour for loaf or Bundt pan (30 minutes for muffins) or until cooked thoroughly.

Tips:

  • Store the starter at room temperature: Keep the starter in a warm place, such as on a kitchen counter or in a warm cabinet. This will help the yeast to stay active and the starter to continue to grow.
  • Feed the starter regularly: Every 5-7 days, feed the starter with equal parts all-purpose flour and water. This will keep the starter healthy and active.
  • Use the starter when it is bubbly and active: The starter is ready to use when it is bubbly and has a slightly sour smell. If the starter is not bubbly, let it sit at room temperature for a few hours or overnight until it becomes active.
  • Don't overmix the batter: Overmixing the batter can toughen the bread. Mix the batter just until the ingredients are combined.
  • Bake the bread in a preheated oven: Preheat the oven to the desired temperature before baking the bread. This will help the bread to rise properly.
  • Let the bread cool before slicing: Allow the bread to cool for at least 10 minutes before slicing. This will help the bread to hold its shape and prevent it from crumbling.

Conclusion:

Friendship bread is a delicious and easy-to-make bread that can be enjoyed by people of all ages. The bread is made with a simple starter that is passed from friend to friend, and the recipe can be easily adapted to suit different dietary needs. Whether you are a beginner baker or an experienced home cook, friendship bread is a great way to share the joy of baking with your friends and family.
