SPICY FRIED FISH BALLS

Spicy Fried Fish Balls image

While eating in Kuala Lumpur food stalls, Zak Pelaccio, chef of Fatty Crab and 5 Ninth restaurants in Manhattan, first tried otak-otak, an intense, spicy mackerel paste. Although in Malaysia you'd usually find otak-otak steamed, he rolls it into balls and deep-fries them as a cocktail snack for 230 Fifth, a rooftop bar where he consults on the menu.

  • Place a steamer insert into a saucepan, and fill with water to just below the bottom of the steamer. Cover, and bring the water to a boil over high heat. Tips:

  • Choose fresh tuna. The fresher the tuna, the better your fish balls will taste. Look for tuna that is bright red or pink in color, with a firm texture. Avoid tuna that is brown or gray, or that has a slimy texture.
  • Use a sharp knife to chop the tuna. This will help to ensure that the fish balls are evenly chopped and have a consistent texture.
  • Do not overmix the fish ball mixture. Overmixing can make the fish balls tough. Mix the ingredients just until they are combined.
  • Fry the fish balls in hot oil. This will help to create a crispy crust and prevent the fish balls from sticking to the pan.
  • Drain the fish balls on paper towels before serving. This will help to remove any excess oil.

Conclusion:

Fried tuna fish balls are a delicious and easy-to-make appetizer or snack. They are perfect for parties or potlucks, and they can also be served as a main course with rice or vegetables. With a few simple ingredients and a little bit of time, you can create a delicious and satisfying dish that your family and friends will love.
