FRIED STUFFED SQUASH BLOSSOMS

Fried Stuffed Squash Blossoms image

If you have a garden and you planted zucchini, you will have an abundance of squash blossoms. These are just amazing, with that tangy goat cheese filling and that batter: so simple, light, and crisp.

Provided by Chef John

Categories     Side Dish     Vegetables     Squash     Zucchini

Time 1h15m

Yield 12

Number Of Ingredients 11

12 fresh zucchini blossoms
¾ cup soft goat cheese at room temperature
1 egg yolk
¼ cup shredded Gruyere cheese
1 pinch freshly ground black pepper, or to taste
1 pinch cayenne pepper
1 cup self-rising flour
½ cup cornstarch
¼ cup ice-cold water, or as needed
vegetable oil for frying
1 teaspoon all-purpose flour, or as needed

Steps:

  • Bring a pot of lightly salted water to a boil. Prepare a large bowl of ice-cold water. Drop squash blossoms into the boiling water until slightly wilted, 30 to 45 seconds; transfer immediately into the cold water to chill. Remove to paper towels to drain.
  • Mix goat cheese, egg yolk, Gruyere cheese, black pepper, and cayenne pepper together in a bowl; stir until smooth. Spoon filling into a heavy, resealable 1-quart plastic bag, squeeze out the air, and seal the bag. Cut a small corner off the bag.
  • Gently insert the cut corner of the bag all the way to the bottom of the open end of a blossom and pipe about 1 tablespoon of filling inside. Pick up petals and drape them up over the filling, covering filling completely. Fold any excess petals over the top of the filled blossom to keep them out of the way. Refrigerate filled squash blossoms until cheese is set and firm, at least 30 minutes.
  • Combine self-rising flour and cornstarch in a mixing bowl; whisk in ice-cold water, a little at a time, until batter is smooth and has the thickness of pancake batter.
  • Pour vegetable oil to a depth of 1 inch into a heavy skillet (such as a cast iron pan) and place over medium heat. Heat oil until a thermometer placed into the oil, not touching the bottom, reads 350 degrees F (175 degrees C). A drop of batter carefully dripped into the oil should sizzle immediately.
  • Remove squash blossoms from refrigerator and dust lightly with all-purpose flour on all sides. Shake off excess flour and dip blossoms in batter. Let excess batter drip off.
  • Gently lay coated squash blossoms in the hot oil on their sides; cook about 6 at a time until pale golden brown, 1 minute on the first side and 30 seconds to 1 minute on the remaining sides. Let cool slightly before serving.

FRIED SQUASH AND/OR ZUCCHINI

Fried Squash and/or Zucchini image

Fried zucchini is a Southern delicacy, but not all fried zucchini recipes are created equal. This one is delicious. Salting and sweating the zucchini before frying pulls most of the extra moisture from the zucchini or yellow squash. That step makes the crust stick much better. These fried zucchini chips are perfectly seasoned...

Provided by Sherry Wilkins

Categories     Vegetables

Time 25m

Number Of Ingredients 9

2-3 squash or zucchini, medium-sized
1 egg, lightly beaten
1/2 c milk
1/2 c cornmeal
1/2 c all-purpose flour
1/4-1/2 tsp salt, depending on your taste (we are light salters)
1/4 tsp black pepper
1/4 tsp garlic powder
vegetable oil

Steps:

  • 1. Slice squash into rounds 1/8"-1/4" thick.
  • 2. When I have time, I salt the squash and let it sit for about 30 minutes to sweat out the excess water but when I am in a hurry I skip this step.
  • 3. Combine milk and egg in a small bowl.
  • 4. In a 2nd bowl (I use a plate) combine the flour, cornmeal, salt, pepper, and garlic powder.
  • 5. If you set the squash aside to sweat, dab them dry with a paper towel.
  • 6. Then dip them in the egg mixture.
  • 7. Then dredge them in the dry mixture.
  • 8. Continue this process until all the rounds have been dredged.
  • 9. Using enough to cover the bottom of the pan, heat oil in a large skillet using medium to medium high heat. Place squash in skillet and fry both sides of squash until golden brown.
  • 10. Once fried, place on a paper towel to absorb extra oil.

BATTER FRIED STUFFED SQUASH BLOSSOMS

Batter Fried Stuffed Squash Blossoms image

Delicate squash blossoms are filled with ricotta and mozzarella. To stuff the squash blossoms easily, spoon the filling into a pastry bag fitted with a coupler, then pipe it directly into each blossom.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers

Number Of Ingredients 9

1 cup, fresh ricotta cheese
1 cup all-purpose flour
Coarse salt and freshly ground pepper
1 cup plus 2 tablespoons milk
3 ounces mozzarella cheese, room temperature, cut into 1/4-inch cubes (about 1 cup)
1 tablespoon coarsely chopped fresh marjoram
2 tablespoons coarsely chopped fresh flat-leaf parsley
16 large squash blossoms
4 cups light olive oil

Steps:

  • Place ricotta cheese in a double layer of cheesecloth. Tie up ends, and hang over a bowl to drain. Place in the refrigerator for 2 to 3 hours, or overnight.
  • In a medium bowl, whisk together flour, salt, and pepper. Slowly add milk to the flour mixture, whisking constantly, until the batter has a slightly thickened and very smooth consistency; set aside.
  • Remove ricotta from the cheesecloth, and discard the liquid. In another medium bowl, stir together drained ricotta, mozzarella, marjoram, and parsley, and season with salt and pepper. Gently open the flower petals and, using a small spoon, fill a blossom about 2/3 full with the ricotta mixture. Wrap the petals around the mixture to seal. Using your fingers, gently press the blossom to distribute filling evenly. Repeat, filling all the blossoms.
  • In a small saucepan fitted with a deep-frying thermometer, heat olive oil over medium-high heat to 375 degrees. Place the stuffed blossoms in the reserved batter until completely coated. Lift out, and gently drag the blossom against the edge of the bowl to remove excess batter. Carefully slip as many blossoms into the hot oil as will comfortably fit without crowding. Fry the blossoms until golden brown, 2 to 3 minutes. Remove from the oil with a slotted spoon, and transfer to several layers of paper towels to drain. Sprinkle with salt, and serve immediately.

COMFORTING OVEN-FRIED OKRA, SQUASH, AND ONION

Comforting Oven-Fried Okra, Squash, and Onion image

What a great way to "fry" some veggies. I loved the combination of veggies and did add the potatoes. The seasonings enhance the flavor of the fresh veggies and the cornmeal/flour coating is great. Can't wait to make this again!

Provided by Kathleen Hagood

Categories     Vegetables

Time 45m

Number Of Ingredients 12

1-2 small squash, diced to 1/2 inch
12-17 pieces of small okra, sliced
2 small new potatoes, red or white, diced to 1/2 inch (optional) it's great with or without the potatoes.
1/2 c onion chopped to about 1/2 inch pieces
1-2 fresh jalapeno peppers, chopped (optional)
3 handfuls of all purpose flour, add more after mixing in meal and spices if needed to cover the vegetables.
2 Tbsp corn meal
1/4 tsp garlic powder
salt and pepper to taste
TO BAKE
pam
aluminum foil

Steps:

  • 1. Preheat oven to 400 degrees.
  • 2. Be sure to use the freshest ingredients. Add each chopped vegetable ingredient into bowl for mixing.
  • 3. Salt, garlic powder, and pepper vegetables and stir. Throw in flour on top of vegetables, then corn meal.
  • 4. If the vegetables aren't sufficiently covered upon stirring, you may add more flour one tablespoon at a time until it's all covered.
  • 5. Place aluminum foil, shiny side up, in a sheet pan. Spray with Pam cooking spray. Remove vegetable mixture from bowl with hands and spread onto the foil in a thin layer. If there is any loose flour in the bowl, dump it into the trash instead of onto the pan.
  • 6. Spray the top of the breaded vegetables with Pam.
  • 7. Place into the preheated oven and bake at 400 degrees for 25-30 minutes or until brown. I stir them around about 10 minutes before they finish cooking to crispen them up better on all sides.
  • 8. Remove from oven and serve immediately. This is good fried on the stove top also, but if you are like my family, you may be cutting back on fried foods. This is a good way to eat nice comfort foods without consuming large amounts of unhealthy fats.

EASY DEEP FRIED SUMMER SQUASH

Easy Deep Fried Summer Squash image

For as long as I can remember my family has loved fried summer squash. Over the years, I have either pan fried them or deep fried them, but I think the results are so much better when it's deep fried. They come out so crispy and delicious and this recipe is so easy to do. Hope you enjoy it.

Provided by Elaine Bovender

Categories     Vegetables

Time 15m

Number Of Ingredients 7

3 or 4 medium yellow summer squash
1 1/2 c milk
1 large egg
3/4 c flour (preferably self rising, but all purpose will work)
3/4 c corn meal (preferably self rising, but plain will work)
oil for frying
salt and pepper to taste

Steps:

  • 1. Wash the squash and slice off the ends and discard. Slice squash into thin slices, about 1/8" thick. Set aside.
  • 2. In a small bowl, combine egg and milk, mixing thoroughly with fork. In another shallow bowl or plate, combine flour and corn meal.
  • 3. Dip squash in milk mixture and then roll in flour mixture, coating both sides.
  • 4. Drop into hot oil (375 degrees) into a deep fryer. Fry for approximately 3 to 4 minutes or until golden brown. Place on a wire rack to let the grease drain. Do not drain on paper towels or the squash will become soggy.
  • 5. After a few minutes, transfer to a serving dish and salt and pepper to taste. Serve and enjoy!
  • 6. Note: You may increase or decrease flour and meal as necessary.

Tips:

  • Choose the right squash: Look for small, firm squash, such as zucchini, yellow squash, or pattypan squash. Zucchini with a diameter of 1 1/2 to 2 inches and yellow squash no longer than 5 inches are ideal.
  • Slice the squash evenly: Cut the squash into 1/4-inch thick slices. This will ensure that they cook evenly.
  • Use a well-seasoned cast iron skillet: A cast iron skillet will help to evenly distribute the heat and prevent the squash from sticking.
  • Don't overcrowd the skillet: Cook the squash in batches if necessary to avoid overcrowding the skillet. Overcrowding will prevent the squash from getting crispy.
  • Cook the squash until it is golden brown: Cook the squash for 2-3 minutes per side, or until it is golden brown and tender. Adjust the cooking time as needed depending on the thickness of your squash slices.
  • Season the squash to taste: Sprinkle the squash with salt, pepper, and other seasonings to taste. You can also add herbs, such as basil or oregano, or grated Parmesan cheese.

Conclusion:

Fried squash is a delicious and easy-to-make side dish that can be enjoyed by people of all ages. It is a versatile dish that can be served with a variety of main courses, such as grilled chicken, fish, or steak. Fried squash is also a good source of vitamins and minerals, including vitamin C, potassium, and fiber. So next time you are looking for a healthy and delicious side dish, give fried squash a try.
