Yield 4 servings

Number Of Ingredients 11

Vegetable oil, for frying
1 cup all-purpose flour
2 large eggs
1 1/2 cups fine cornmeal
2 teaspoons Cajun seasoning
1 teaspoon fresh thyme
3 cups fresh or frozen okra (thawed if frozen)
Kosher salt
24 large shrimp, peeled and deveined (tails intact)
3 large tomatoes, cut into wedges
Tartar sauce and lemon wedges, for serving (optional)

Steps:

  • Heat 1 1/2 inches of vegetable oil in a medium Dutch oven or heavy-bottomed pot over medium-high heat until a deep-fry thermometer registers 350 degrees F.
  • Meanwhile, put the flour in a shallow dish. Lightly beat the eggs with 1/2 cup water in another shallow dish. Whisk the cornmeal, Cajun seasoning and thyme in a third dish. Dredge the okra in the flour, shaking off the excess. Dip in the beaten eggs, then dredge in the cornmeal mixture. Fry, turning as needed, until golden, about 2 minutes. Drain on paper towels and season with salt.
  • Stir the remaining flour into the remaining cornmeal mixture. Dip the shrimp in the eggs, then dredge in the flour-cornmeal mixture, turning to coat. Fry the shrimp in batches, turning occasionally, until golden, about 3 minutes. Drain on paper towels and season with salt.
  • Season the tomatoes with salt. Serve the shrimp and okra with tartar sauce, lemon wedges and the tomatoes.

SAZóN-SPICED SHRIMP AND OKRA

Sazón-Spiced Shrimp and Okra image

Fresh okra is wonderfully versatile, and searing it in a hot pan is one way to lend texture while preserving its shape. This dish comes together entirely within a large skillet; you'll work in stages to cook the okra and then the shrimp. A dusting of annatto-infused sazón adds aromatic and earthy flavors, and a tinge of spice. Finished with fresh cilantro and a squeeze of lime, this dish is perfect for a light evening meal or as part of any warm-weather menu.

4 tablespoons grapeseed or other neutral oil
1 pound okra, stem ends trimmed, halved lengthwise
Kosher salt
1/2 small yellow onion, finely chopped (1/3 cup)
2 garlic cloves, sliced
1 jalapeño, thinly sliced
1 pound large shrimp, shelled and deveined
2 teaspoons sazón, homemade or store-bought
1/4 cup chopped fresh cilantro
1 lime, halved

Steps:

  • Heat 1 tablespoon oil in a large skillet over medium-high. Add half of the okra, cut sides down, and cook without stirring until golden brown, about 3 minutes. Heat 1 tablespoon oil in the skillet and repeat the cooking process with remaining okra and an additional 1/2 teaspoon salt.
  • Lower the heat to medium and heat the remaining 2 tablespoons oil in the skillet (no need to wash). Add the onion and cook, stirring, until softened, about 1 minute. KARDEA'S OKRA SOUP WITH SHRIMP

Kardea's Okra Soup with Shrimp image

Okra soup is a traditional tomato-based soup that originated in West Africa. While you can add any protein to this dish, I like using shrimp when it's in season in the Lowcountry because it pairs really well with the okra.

Provided by Kardea Brown

Categories     main-dish

Time 1h50m

Yield 10 servings

Number Of Ingredients 21

2 cups medium shrimp, peeled and deveined, shrimp reserved for the okra soup, shells cleaned in cold water and reserved for the shrimp broth
1 cup large-chopped carrot
1 cup large-chopped celery
1 cup large-chopped onion
1 tablespoon unsalted butter
1 1/2 teaspoons kosher salt
1 bay leaf
2 tablespoons olive oil
2 garlic cloves, minced
1 large onion, chopped
1 medium green bell pepper, chopped
2 tablespoons unsalted butter
2 cups fresh or thawed frozen corn
2 cups thawed frozen lima beans
1 cup diced fresh Roma tomatoes
One 28-ounce can diced tomatoes
Kosher salt and freshly ground black pepper
2 1/2 cups sliced fresh or thawed frozen okra
1 teaspoon ground ginger
Juice of 1/2 lemon
Steamed rice, for serving, optional

Steps:

  • For the shrimp broth: Put the shrimp shells, carrots, celery, onions, butter, salt, bay leaf and 10 cups water in a large pot. Bring to a boil for 5 minutes. Reduce the heat and simmer, covered, for about 45 minutes, making sure to skim off and discard any impurities that rise to the top. Strain the liquid, reserving 3 cups of the broth for the okra soup. Reserve the additional broth for another use.
  • For the okra soup: Heat a large gumbo pot or Dutch oven over medium-high heat, add the olive oil, garlic, onions, green peppers and 1 tablespoon of the butter and saute until the vegetables soften. Next, add the corn, lima beans and Roma tomatoes and mix together. Add the canned diced tomatoes and reserved 3 cups shrimp broth, stir, cover, bring to a simmer and cook for about 20 minutes.
  • While the soup is simmering, melt the remaining tablespoon of butter in a medium skillet, add the reserved shrimp and season with salt and pepper. Cook until the shrimp begin to turn pink. Add the okra, ground ginger and lemon juice, stir to mix and then cook until the okra and shrimp are cooked through.
  • Once the soup has simmered for 20 minutes, add the shrimp and okra mixture to the soup. Cover and cook for an additional 10 minutes. Stir the soup, then serve over rice (or enjoy it without rice).

Tips:

  • To ensure your fried shrimp and okra are crispy, make sure the oil is hot enough before adding the ingredients. You can check this by dropping a small piece of batter into the oil. If it sizzles immediately, the oil is hot enough.
  • Don't overcrowd the pan when frying. This will cause the oil temperature to drop, resulting in soggy shrimp and okra.
  • Use a slotted spoon to remove the shrimp and okra from the oil. This will help to drain off any excess oil.
  • Season the shrimp and okra with your favorite spices before frying. This will give them a delicious flavor.
  • Serve the fried shrimp and okra with your favorite dipping sauce. Some popular options include tartar sauce, cocktail sauce, and ranch dressing.

Conclusion:

Fried shrimp and okra is a classic Southern dish that is easy to make and always a crowd-pleaser. With its crispy coating and tender, flavorful filling, it's a dish that everyone will love. So next time you're looking for a quick and easy meal, give fried shrimp and okra a try. You won't be disappointed!
