Steps:
- Preheat the oven to 375 degrees F.
- In a 10-inch cast-iron skillet over medium heat, cook the sausage until browned and the fat is rendered, about 10 minutes, breaking up the chunks of sausage with the back of a wooden spoon. Remove the sausage to a bowl and set aside.
- Add 2 cups of the milk and 2 cups water to the skillet and bring to a boil. Whisk in the grits slowly until smooth and no lumps remain. Reduce the heat and continue to cook, whisking, until very thick, about 5 minutes. Remove from the heat and stir in about half of the grated cheese.
- In a medium bowl, whisk together the eggs with the hot sauce and remaining 1 cup milk. Slowly stream the egg mixture into the skillet with the grits while continuously whisking. Fold in the cooked sausage, scallions and jalapeno and season with salt and pepper. Top with the remaining cheese and bake until a knife inserted in the center comes out mostly clean, 50 minutes to 1 hour.
- Slice the reserved scallion tops and sprinkle on top just before serving.
SAUSAGE CHEESE GRITS
This is a great, flavorful way to prepare grits. You can also use mild sausage and less or no hot sauce if you prefer not to have the extra spice. This can also be prepared up to the baking stage, and refrigerated or frozen until ready to finish.

Steps:
- Bring water and 2 teaspoons salt to a boil in a heavy saucepan over medium-high heat. Whisk grits into the boiling water, and then whisk in half-and-half. Reduce heat to medium-low and simmer, stirring occasionally, until grits are thickened and tender, 15 to 20 minutes. Set aside and keep warm.
- Sprinkle shrimp with salt and cayenne pepper to taste. Add lemon juice, toss to combine, and set aside to marinate.
- Place sausage slices in a large skillet over medium-high heat. Cook, stirring occasionally, until browned, 5 to 8 minutes. Remove sausage from the skillet.
- Add bacon to the same skillet and increase heat to medium-high. Cook until evenly browned, about 5 minutes per side. Transfer bacon to paper towels to drain, then chop or crumble when cool enough to handle. Leave bacon drippings in the skillet.
- Add bell peppers, onion, and garlic to the bacon drippings; cook and stir until onion is translucent, about 8 minutes.
- Stir cooked sausage and marinated shrimp into the skillet with the cooked vegetables. Turn off the heat and set aside.
- Melt butter in a small saucepan over medium heat. Whisk in flour, stirring to create a smooth roux. Turn heat to low and cook, stirring constantly, until mixture is golden brown in color, 8 to 10 minutes. Watch carefully, mixture burns easily.
- Pour the roux over the sausage, shrimp, and vegetables. Place the skillet over medium heat, add chicken broth, bacon, and Worcestershire sauce, and stir to combine. Cook until sauce thickens up and shrimp turn opaque and bright pink, about 8 minutes.
- Just before serving, mix sharp Cheddar cheese into grits until melted and grits are creamy and light yellow. Serve shrimp mixture over cheese grits.

SOUTHERN FRIED GRIT PATTIES
These are a great addition to any breakfast. It has a crunchy outer layer and a soft middle. It is full of spice and flavor. You can switch it up and use ground sausage for the meat or even bacon. I like to fry an egg with mine and eat them together. I also like to eat the patties with maple syrup drizzled on them. Enjoy this...

Steps:
- Melt 1 tablespoon butter in heavy large saucepan over medium-high heat. Add sausage and sauté until brown, about 3 minutes. Add 3 3/4 cups broth and bring to boil. Gradually whisk in grits. Reduce heat to medium and simmer until mixture is thick, stirring occasionally, about 8 minutes. Mix in more broth by 1/4 cupfuls to thin, if desired. Stir in remaining 3 tablespoons butter. Season grits to taste with salt and pepper and serve.
Tips:
- Choose the right type of grits. Stone-ground grits have a coarser texture and a more robust flavor than quick-cooking grits. For this recipe, we recommend using stone-ground grits.
- Use flavorful sausage. The type of sausage you use will significantly impact the flavor of the dish. We recommend using a spicy breakfast sausage or a smoked sausage.
- Don't overcook the grits. Grits should be cooked until they are tender but still have a slight bite to them. Overcooked grits will be mushy and bland.
- Season the grits well. Grits can be bland, so it's important to season them well with salt, pepper, and other spices. You can also add cheese, herbs, or vegetables to the grits for extra flavor.
- Serve the grits immediately. Grits are best served hot and fresh. If you need to make them ahead of time, you can reheat them in the microwave or on the stovetop.
Conclusion:
Fried sausage grits are an easy-to-make, hearty, and flavorful dish that is perfect for breakfast, lunch, or dinner. With a few simple ingredients and a little bit of time, you can create a delicious meal that the whole family will enjoy. So next time you're looking for a quick and easy meal, give fried sausage grits a try. You won't be disappointed!
