CILANTRO RICE

Cilantro Rice image

Borrowing from the fresh flavors of arroz verde and reminiscent of Chipotle's cilantro-lime rice, this simple dish is a low-effort, high-reward accompaniment to all good things, such as pork chops and crispy tofu. Though diced fresh onion could season the rice, onion powder is a savory bedrock with its concentration of umami, especially once bloomed in oil. This aromatic dish plays to the strengths of the cilantro plant: The stems cook with the rice, lending their peppery brightness, and the tender leaves confetti the dish for a final viridescent flourish.

Time 35m

Yield 4 servings

Number Of Ingredients 8

1 tablespoon unsalted butter
1 tablespoon vegetable oil
1 tablespoon onion powder
1 bunch cilantro, stems and leaves separated, both finely chopped
1 cup long-grain white rice, such as jasmine or basmati
1/2 teaspoon kosher salt (Diamond Crystal), plus more to taste
1 large jalapeño, thinly sliced
Juice of 1/2 lime, plus more to taste

Steps:

  • Melt the butter in a medium saucepan over medium heat. Add the oil, then stir in the onion powder and cilantro stems until fragrant, about 30 seconds. Add the rice and stir until oil-slicked, just a few seconds.
  • Add 1 1/2 cups water, raise the heat to high and bring to a simmer. Reduce the heat to low, cover the saucepan and cook until all of the water is absorbed, 17 to 20 minutes. Remove from the heat and let the rice sit, covered, to steam for 10 more minutes.
  • Fold in the salt, cilantro leaves, jalapeño and lime juice. Taste for seasoning, adding more salt and lime juice as desired.

Yield Serves 4 to 6 as a side dish

Number Of Ingredients 8

1 cup fresh cilantro sprigs
4 scallions
2 teaspoons cumin seeds
1 tablespoon vegetable oil
4 cups chilled cooked white rice (see note above)
1 tablespoon seasoned rice vinegar
1 tablespoon soy sauce such as Kikkoman
1 cup frozen peas

Steps:

  • Chop cilantro and thinly slice scallions. In a large nonstick skillet cook cumin seeds in oil over moderately high heat, stirring, until fragrant, about 1 minute. Add rice and fry, stirring occasionally, until heated through, about 3 minutes. Add vinegar and soy sauce, stirring to coat rice, and stir-fry until liquid is evaporated. Stir in cilantro, scallions, and peas and stir-fry until heated through, about 2 minutes, seasoning with salt if necessary.

Tips for Perfect Fried Rice with Cilantro:

1. Cook the Rice Ahead of Time: Cold, day-old rice grains are drier and separate better during stir-frying, resulting in less gummy and more fluffy texture. 2. Use High-Quality Ingredients: The better the quality of your ingredients, the more flavorful the fried rice will be. Fresh, vibrant cilantro; premium soy sauce; and aromatic jasmine rice make a big difference. 3. Heat the Wok or Pan Properly: A well-heated wok or pan ensures that the rice will sear and not steam, resulting in distinct grains and the signature wok hei or "breath of the wok" flavor. 4. Don't Overload the Wok or Pan: Stir-frying in batches prevents overcrowding, allowing each ingredient to get properly cooked and retain its flavors and textures. 5. Season Wisely: Finding the right balance of soy sauce, sesame oil, and other seasonings is key. Start with small amounts and adjust to taste. 6. Garnish Generously: A generous sprinkling of chopped cilantro and a squeeze of lime juice add freshness, vibrancy, and a burst of flavor to the dish.

Conclusion:

Fried rice with cilantro is a versatile and delectable dish that can be easily customized with various ingredients and flavors. Whether you prefer classic simplicity or an array of colorful additions, this recipe provides a solid foundation for creating a satisfying and authentic fried rice experience at home. The key to success lies in mastering the technique, using high-quality ingredients, and finding the perfect balance of flavors. So, grab your wok or pan, gather your ingredients, and embark on a culinary journey that will leave you craving more.
