Time 50m

Yield 4 to 6 servings

Number Of Ingredients 13

8 dried shiitake mushrooms
3 tablespoons peanut oil
2 large eggs, lightly beaten with a pinch of kosher salt
4 scallions (white and green), thinly sliced
1/4 cup minced carrot
1 large clove garlic, minced
Pinch red chile flakes
1 teaspoon minced peeled fresh ginger
2 tablespoons soy sauce
1 teaspoon toasted sesame oil
3 cups cooked long-grain rice
1 cup cooked meat cut in 1/2-inch cubes, such as pork, ham, beef, or chicken
1/2 cup frozen peas, defrosted in a strainer at room temperature

Steps:

  • Put the mushrooms in a small bowl and cover with boiling water and soak until re-hydrated, about 20 minutes. Drain, squeeze dry, and cut mushrooms in quarters. Set aside.
  • Heat 1 tablespoon of the peanut oil in a well-seasoned wok or large non-stick skillet over medium-high heat. Swirl to coat the pan. Pour in the eggs, swirl the pan so the egg forms a large thin pancake. (Lift the edge of the egg to allow any uncooked egg to run to the center.) As soon as the egg has set, turn it out of the pan onto a cutting board. Cool, cut into 1 inch pieces.
  • Wipe out the pan with a paper towel and heat the remaining peanut oil over high heat. Add the scallions and carrots and stir-fry for 1 1/2 minutes. Add the mushrooms, garlic, chile, and ginger, stir-fry for 1 minute more. Add the soy sauce, sesame oil and rice and stir-fry for 2 to 3 minutes. Add the meat, peas, and reserved egg, cook, stirring until heated through, about 2 to 3 minutes. Serve immediately.

CHINESE FRIED RICE

Chinese Fried Rice image

This Chinese fried rice has the flavor those other recipes are missing. Tastes like takeout. I want to dedicate this dish to Bergy, whose recipe "AM & B's Indonesian Mehoon" has inspired this dish. Make sure you season your rice with salt before it cooks. Add some butter to the cooking water, as well. Other seasonings should be added before you cook, as well, so it has time to get inside the rice. If you like sesame flavor, add 1 tsp. of it after you add the green onions, but do not use it as a cooking oil because it easily burns.

Yield Makes 4 servings

Number Of Ingredients 8

3 tablespoons canola oil
2 eggs, beaten
1 bunch scallions, roughly chopped
1 cup leftover pork, chicken, or beef, diced
1 cup frozen peas and carrots, thawed (plus any leftover vegetables you have on hand)
4 cups cold cooked white or brown rice
4 tablespoons soy sauce
Salt and pepper to taste

Steps:

  • 1. In a large skillet or wok, heat 1 tablespoon of the oil over medium-high heat.
  • 2. Add the eggs and scallions. Cook, breaking up the eggs with a spoon until they are lightly browned.
  • 3. Stir in the meat, vegetables, rice, and the remaining oil. Increase heat slightly and cook until the rice is crispy, about 5 minutes.
  • 4. In a small bowl, combine the soy sauce with 4 tablespoons of water. Pour the mixture over the rice.
  • 5. Continue cooking, stirring occasionally, until the rice has absorbed all the liquid, 3 to 5 minutes. 6 Season with the salt and pepper and serve, with extra soy sauce on the side.

Tips:

  • Cook the rice ahead of time and let it cool completely before frying. This will help the rice stay fluffy and separate.
  • Use day-old rice. Day-old rice is less likely to be sticky and will fry up better.
  • Use a large skillet or wok over medium-high heat. This will help the rice cook evenly and quickly.
  • Add the rice to the hot oil and spread it out in a thin layer. This will help the rice fry evenly.
  • Stir the rice frequently. This will help prevent the rice from sticking together and burning.
  • Add the vegetables and other ingredients towards the end of cooking. This will help them stay crisp and flavorful.
  • Season the rice to taste with salt, pepper, and other spices.
  • Serve the fried rice immediately.

Conclusion:

Fried rice is a delicious and versatile dish that can be easily customized to your liking. With a few simple tips, you can make restaurant-quality fried rice at home. So next time you're in the mood for a quick and easy meal, give fried rice a try. You won't be disappointed!
