STIR-FRIED POTATOES AND PEPPERS RECIPE

Stir-Fried Potatoes and Peppers Recipe image

Provided by Camille

Number Of Ingredients 7

6-8 medium potatoes, thinly sliced
1 medium onion, sliced
1 medium green bell pepper, sliced
3 tablespoons olive oil (add more if needed)
salt and pepper to taste
seasoning salt to taste
water (as needed)

Steps:

  • Place large skillet on stove-top, pour in olive oil, let oil warm up over medium high heat. Add the sliced potatoes and let them cook for a couple of minutes (7-8 minutes), stirring occasionally so that they don't burn. As the potatoes start to get tender, add peppers and onions. Lower the heat to medium, top with salt, pepper, and seasoning salt (plus any other spices you like- sometimes I like to throw a little Parmesan cheese on there) and place lid on top of the skillet. Stir every couple of minutes to keep from burning (if you need to add liquid, add water 1-2 tablespoons at a time). Continue to cook for 10-15 minutes (or longer if your potatoes are sliced thick), until potatoes, peppers, and onions are all soft and tender. Add more salt and pepper if needed.

KIELBASA, PEPPERS, ONIONS & FRIED POTATOES RECIPE - (4.2/5)

Kielbasa, Peppers, Onions & Fried Potatoes Recipe - (4.2/5) image

Provided by Lsweetnell

Number Of Ingredients 8

1 package kielbasa or other smoked sausage, cut into 1/4 inch rounds
1 green bell pepper, diced
1 large onion, diced
2 - 3 large potatoes, peeled and diced
3 tablespoons olive oil, separated
4 tablespoons butter
Salt and pepper
1 teaspoon paprika

Steps:

  • In a medium saucepan, skillet heat 2 tablespoons olive oil and 4 tablespoons butter over medium-high heat. Add the diced potatoes and season with salt and pepper. Fry until golden brown and cooked through, around 8 to 10 minutes. In a separate large skillet heat 1 tablespoon olive oil over medium-high heat. Add the Kielbasa and cook until the sausage is lightly browned on both sides.. Add the peppers, onions and paprika and cook until the onions are tender, and the kielbasa is cooked through. Add the browned potatoes to the sausage, pepper and onions in the large saucepan. Continue to cook for about 5 minutes and serve.

Tips:

  • Choose the right potatoes: Yukon Gold or Russet potatoes are good options for frying, as they have a high starch content that helps them crisp up nicely.
  • Cut the potatoes evenly: This will help them cook evenly. Aim for 1/2-inch thick slices or wedges.
  • Soak the potatoes in cold water: This will help remove excess starch and prevent the potatoes from sticking together.
  • Dry the potatoes thoroughly: Before frying, make sure the potatoes are completely dry. This will help them crisp up and prevent them from steaming.
  • Use a well-seasoned cast iron skillet: A cast iron skillet will help the potatoes get evenly crispy. If you don't have a cast iron skillet, you can use a nonstick skillet.
  • Heat the oil to the right temperature: The oil should be hot enough to fry the potatoes without burning them. A good way to test the oil temperature is to drop a small piece of potato into the oil. If it sizzles immediately, the oil is hot enough.
  • Don't overcrowd the skillet: When frying the potatoes, don't overcrowd the skillet. This will prevent them from cooking evenly.
  • Season the potatoes to taste: After the potatoes are cooked, season them with salt, pepper, and any other desired seasonings.

Conclusion:

Fried potatoes and peppers are a delicious and easy-to-make side dish. They are perfect for any occasion, from a weeknight dinner to a backyard barbecue. With a few simple tips, you can make sure your fried potatoes and peppers are crispy, flavorful, and delicious.
