CRISPY FRIED POTATO WEDGES

Crispy Fried Potato Wedges image

I leave the skin on for extra flavor but you can peel the potatoes if desired. Use one large slice of onion but do not chop as the onion slice will be removed before frying the potato wedges. Plan ahead the boiled potatoes need to be chilled before frying. You can fry the wedges slightly ahead and just crisp them up in the oven before serving.

Yield 6

Number Of Ingredients 6

2 tablespoons paprika
1/2 teaspoons ground pepper
1/2 teaspoon garlic powder
1/8 teaspoon cayenne pepper
6 russet potatoes, well scrubbed
6 tablespoons malt vinegar

Steps:

  • Preheat oven to 450 degrees. Coat 2 large baking sheets with non-stick cooking spray. Mix first four ingredients in large bowl. Cut potatoes lengthwise 1/2-3/4 inches thick. Toss the wedges in the spices then arrange in single layers on baking pans. Bake for 15 minutes then turn potatoes over. Return to oven and bake for an additional 15 minutes or until golden brown. Serve with malt vinegar.

Tips

  • Choose the right potatoes: Russet potatoes are the best choice for potato wedges because they are starchy and hold their shape well during frying.
  • Cut the potatoes into even wedges: This will help them cook evenly.
  • Soak the potato wedges in cold water for 30 minutes before frying: This will help remove excess starch and make the wedges crispier.
  • Dry the potato wedges thoroughly before frying: This will prevent the oil from splattering.
  • Use a large skillet or Dutch oven to fry the potato wedges: This will give them plenty of room to cook evenly.
  • Heat the oil to 350 degrees Fahrenheit before adding the potato wedges: This will help them brown quickly and evenly.
  • Fry the potato wedges in batches: This will prevent the oil from getting too crowded and the wedges from sticking together.
  • Cook the potato wedges until they are golden brown and crispy: This will usually take about 10-12 minutes per batch.
  • Drain the potato wedges on paper towels before serving: This will help remove any excess oil.
