I seem to always have some leftover mashed potatoes and never quite know what to do with them. This is a nice recipe to make patties that go well with eggs in the morning.

Time 20m

Number Of Ingredients 9

2 c leftover garlic mashed potatoes
1 c mozzarella cheese, shredded
1 large egg, lightly beaten
1/2 tsp salt
1/2 tsp onion powder
1/4 tsp pepper
1 large egg, slightly beaten (for coating)
1 c soft bread crumbs
1/2 c canola oil

Steps:

  • 1. Combine first 6 ingredients; shape into 6 patties.
  • 2. Dip patties into egg, and lightly coat with breadcrumbs.
  • 3. Pour oil into a large, heavy skillet. Fry patties in hot oil over medium heat until lightly browned, turning once.
  • 4. Drain on paper towels.
  • 5. NOTE: You can substitute 2 cups cooked, mashed potatoes plus 1/2 teaspoon garlic powder for the garlic mashed potatoes.

Tips:

  • For crispy potato patties, use cold mashed potatoes. This will help the patties hold their shape better during frying.
  • If the potato mixture is too wet, add more bread crumbs until it is firm enough to form into patties.
  • To prevent the patties from sticking to the pan, make sure the oil is hot before adding them.
  • Do not overcrowd the pan when frying the patties. This will cause them to steam instead of fry.
  • Flip the patties halfway through cooking to ensure they are evenly browned on both sides.
  • Serve the potato patties hot with your favorite dipping sauce.

Conclusion:

Fried potato patties are a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. They are easy to make and can be customized to your liking. With the tips provided in this article, you can create crispy and flavorful potato patties that the whole family will love.
