6 cups all-purpose flour
4 tablespoons granulated sugar
1/2 teaspoon salt
1 cup shortening, plus more for frying
2 eggs, beaten
2 cups buttermilk, more if needed
Apple pie filling, canned
Cherry pie filling, canned
Powdered sugar, for sprinkling

Steps:

  • To make the pastry, mix together the flour, granulated sugar and salt. Cut in 1 cup of the shortening until the mixture resembles coarse crumbs. Add 1 of the eggs and the buttermilk and stir until it just comes together. Add a little more buttermilk if needed. Form it into a ball and refrigerate for at least an hour.
  • To make the pies, roll the pastry out into a large square. Trim the edges to make a rectangle. Cut into 8 to 10 long rectangles, using a butter knife.
  • Spoon a tablespoon or so of filling into the top half of one of the rectangles.
  • Use the remaining beaten eggs to seal the edges by folding the bottom half of the rectangle over the top. Then crimp the edges shut with a fork. Repeat with the other pies, filling half with apple pie filling and half with cherry pie filling.
  • Heat shortening in a medium, deep saucepan over medium-high heat to 350 degrees F. Fry the pies until golden brown, 2 to 3 minutes per side. Remove and immediately drain on paper towels.
  • Sprinkle with powdered sugar and serve.

1 cup shortening
1 cup milk
8 ounces dried apricots
1 (6 ounce) package dried peaches
¾ cup white sugar

2 cups vegetable oil for frying

Steps:

  • To Make Crust: In a large bowl, mix together flour and salt. Cut in shortening until mixture is crumbly. Mix in milk and stir until dough forms a ball. Roll out dough and cut into 18 6-inch circles. Set aside.
  • To Make Filling: In a large saucepan, combine apricots, peaches, and sugar. Add enough water to cover fruit. Cover pan and cook over low heat until fruit is falling apart. Remove lid and continue to cook until water is evaporated.
  • Place oil or shortening in small high-sided skillet. Place over medium heat. Spoon equal amounts of filling into each pastry circle and fold in half. Seal pastry with a fork dipped in cold water.

1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 cup vegetable oil
1 cup warm water
1 lb browned ground beef or 1 lb cooked shredded chicken
1/2 medium onion, diced
1/2 green bell pepper, diced
3 garlic cloves, crushed
1/8 cup chopped fresh cilantro
1/8 cup sliced green olives
1 pinch salt and pepper
1 tablespoon tomato paste
1 (1 1/4 ounce) package sazon goya with coriander and annatto
1 cup vegetable oil (for frying)

Steps:

  • DOUGH: combine all the dry ingredients in electric mixer, add all the wet ingredients. Mix for about 3 minutes until well combined. Dough will form.
  • Take it out and knead for about 3 minutes, let sit wrapped in plastic-wrap for another 15 minutes.
  • Divide into 12 pieces, then roll into 4 inch circles.
  • FILLING: Brown ground beef (drain excess grease), or sauté shredded chicken in 2 tablespoons of vegetable oil. Add all the ingredients and cook for an additional 10 minutes stirring occasionally. Let cool.
  • COOKING: Preheat the oil in a frying pan at about a medium temperature. Place about 2 tablespoons of the filling in the dough and seal the edges with a fork.
  • Fry for about 5 minutes on each side, then place on dish lined with paper-towels.

I found this recipe in a Southern Living Magazine about 20 years ago. It was for apple fried pies but my mother and I modified it for dried apricots. I don't make these often because it is time consuming to roll out each individual fried pie.

6 ounces dried apricots
1/3 cup sugar
1/2 teaspoon salt
1 cup water, cold
4 cups flour, all-purpose
1 cup shortening

Steps:

  • Place apricots in a medium saucepan; add water to cover.
  • Cover pan and cook over low heat 15 minutes or until tender.
  • Mash appricots, and add sugar; set aside.
  • Combine flour and salt; cut in shortening with pastry blender until mixture resembles coarse meal.
  • Sprinkle cold water (1 Tablespoon at a time) evenly over surface; stir with a fork until dry ingredients are moistened.
  • Shape into a ball and chill.
  • Divide dough in half.
  • Roll one portion to 1/8" thickness on a lightly foured surface; cut into 3 1/2-inch circles.
  • Spoon aout 1 teaspoon apricot filling on half of each pastry circle, moisten edges and fry.

1 (15 ounce) package frozen prepared pie crusts, thawed

  • Place apricots in a saucepan, and add water to cover. Bring to a boil. Reduce heat to low and simmer for 30 minutes, or until tender. Drain, reserving 5 tablespoons liquid.
  • Place apricots and reserved liquid in a food processor container fitted with steel blade. Process until smooth. Add sugar, butter, and cinnamon; process until blended.
  • Roll out one crust on lightly floured surface and cut it into six 4 inch squares. Place 1 tablespoon apricot filling in the center of each square. Fold each square in half diagonally to form a triangle. Press a fork dipped in flour onto the edges to seal, and poke tops to permit steam to escape. Repeat with remaining crust and apricot mixture.
  • Heat oil in a large skillet on medium-high heat. Cook triangles, a few at a time, 2 to 3 minutes on each side; fry until the crust is golden brown. Drain on paper towels. Sprinkle with confectioners' sugar.

  • Pinch off a medium size ball of dough. Roll out ball of dough on lightly floured surface until you get approximately 5 inch cirlce. Place about 1/4 cup of meat filling in the center of each round and brush edges lightly with egg wash. Fold edges together and crimp closed with a fork.
  • Heat oil in a deep pot or electric deep-fryer to 360 degrees. Fry the pies, in batches, until golden. Drain on paper towels and serve immediately.
  • Instructions for Cajun Tartar Sauce:.
  • Place the egg, garlic, lemon juice, parsley and green onions in a food processor and process for about 15 seconds until pureed. With the processor running, pour the oil through the feed tube in a steady stream. Add the cayenne, mustard and salt.

1/4 cup Crisco
1 cup milk
4 apples
1/4 cup butter
1 teaspoon cinnamon

  • Roll into balls the size of a walnut.

1/2 cup all-purpose flour, plus more for flouring surface
1/2 cup cake or pastry flour
1/4 cup confectioners' sugar
1/4 teaspoon salt
4 tablespoons butter, at room temperature
1 large egg, beaten
1 tablespoon butter
1/4 cup packed light-brown sugar
1/4 teaspoon ground cinnamon
1/2 vanilla bean, split lengthwise and seeds scraped out with a knife
1 tablespoon honey
1/2 teaspoon grated lemon zest
2 slightly unripe Bartlett pears about 1 pound, peeled, quartered, cored and cut into 1/2-inch chunks
1 egg
3 cups vegetable oil
Ice cream, for serving

Steps:

  • Make the dough: Pulse the flours, sugar and salt in a food processor to combine. Add the butter and pulse again until the flour looks like cornmeal, then pulse in the egg until the mixture clumps together. Knead the dough a few times, press it into a disc and wrap loosely in plastic. Refrigerate for at least 30 minutes before rolling out.
  • Make the filling: In a medium skillet over medium-high heat, melt the butter with the sugar, cinnamon, vanilla seeds, honey and lemon zest. Stir constantly for 5 minutes. Add the pears and cook, stirring from time to time, until they start to soften, about 5 minutes. Let cool.
  • Beat the egg with 1 tablespoon water. Line a baking sheet small enough to fit in your freezer with parchment or wax paper. On a floured surface, roll out the dough to 1/8 inch thick and cut into circles with a 4-inch cutter. Gather the unused dough into a ball and repeat until you have used all the dough. You should have 8 to 10 circles. Place on the baking sheet and refrigerate for about 15 minutes.
  • Working quickly, make the pies: brush the outer 1/2 inch of a pastry circle with the egg wash, then spoon a heaping tablespoon of pears onto the circle, off center. Top the pears with as much of the liquid from the pan as will fit without spilling out, about 1/4 teaspoon. Lift the edge opposite the pears with a spatula and fold the pastry to cover the pears, making a half-moon shape. Crimp the edges with the tines of a fork to seal the pie. Transfer to the lined baking sheet. Repeat with the remaining pastry circles. (If the dough starts to tear, chill it.) Freeze for at least 3 hours.
  • Shortly before serving the pies, in a large, heavy skillet set over high heat, add enough oil to rise 1/2 inch up the pan and heat until it reaches 350 degrees or a pinch of dough immediately bubbles and starts to brown. Fry 3 or 4 pies at a time, turning them once, until both sides are golden, 4 to 5 minutes. If they start to turn dark brown, lower the heat a little. Remove with a slotted spoon and drain on brown paper bags. Repeat with the remaining pies. Serve warm, with ice cream.

2 granny smith apples, peeled, cored, and diced
3 tablespoons granulated sugar
2 tablespoons fresh lemon juice
1/2 tablespoon minute tapioca
1/2 teaspoon cinnamon

1/8 teaspoon allspice
1/8 teaspoon salt
Pie dough (store bought or homemade), chilled
1 quart vegetable oil, for frying
Egg Wash
1 egg, lightly beaten
1/4 cup heavy cream
Icing
1 cup powdered sugar, sifted
2 tablespoons buttermilk
1 teaspoon vanilla extract

Steps:

  • 1. Place filling ingredients in a large bowl and toss until well combined. Cut chilled dough into 2 equal pieces. Roll into equal rectangles about 1/4 inch thick. Onto one of the rectangles, place spoonfuls of filling (about 2 tablespoons each) in rows 1/2 inch apart. Place pies in the refrigerator and chill for 30 minutes.

2 Pillsbury pie crusts
2 apples
1/4 cup sugar optional
1/4 teaspoon cinnamon, optional
ICING:
1 teaspoon softened butter
1 cup powdered sugar
1/2 teaspoon vanilla
1 to 3 tablespoons milk

Steps:

  • Peel the apples and chop them up. Put them in a pot with the sugar and cinnamon. Heat on low until apples are soft and sugar is dissolved. Remove from pot and mash into very small chunks. Roll out the pie crust on a lightly floured board. Using a 3 inch cookie cutter, cut out about 7 circles. Place a scant teaspoon of the cooked apples in the middle of the round. Using very cold water and your fingers, wet all the way around the pie, fold it over and crimp edges with the fork and make a slit in the top. Put a little oil in a skillet and let it get hot first, then place the little pies in the skillet and cook for 2 to 3 minutes on each side. Take them out of the oil when they are cooked and place on a wire rack with paper towels on them so that will take off the excess oil.   • 1. Let the biscuits come to room temperature for easy rolling. Flour your surface. Roll out a biscuit to a circle diameter of of 5-6 inches. Place 1-2 tablespoons of pie filling in the lower half of the biscuit. Take water and dab around one edge (this helps sealing). Fold over the top and press around the edge with a fork.
  • 2. Cook in canola oil over medium low heat until golden brown, about 2-3 minutes. Flip gently to the other side. Drain on paper towels. Dust with powdered sugar if desired.
  • 3. I always have a little pie filling left over, but it will make a can of ten biscuits.

1 lb dried apricot
10 biscuits (from the can)
cooking oil

Steps:

  • Cover dried apricots with water, and cook in a sauce pan till "jam" like texture.
  • Set aside to cool.
  • Roll out biscuits to 6-8' circle's.
  • Place 2-3 Tbs. of apricots in center of biscuit.
  • Fold biscuit in half. Seal with Fork.
  • Fry in med. hot cooking oil- until golden brown.
  • Sprinkle with Sugar while warm.
  • Let em' cool a bit, and ENJOY!

Filling:
1-2 packages of Goya pot sticker wrappers (Disco Grande) in frozen food aisle
1 lb. browned ground beef or cooked shredded chicken
1/2 medium onion, diced
2 tablespoons olive oil
1/2 green bell pepper, diced
3 garlic cloves, crushed
1/8 c. chopped fresh cilantro
1/8 c. sliced green olives
salt and pepper, to taste
1/4-1/2 jalapeno, minced (optional)
1 tbsp. tomato paste
1 pkg. Goya Sazon with annato
For cooking:
1 cup vegetable oil for frying.

Steps:

  • FILLING: Brown ground beef (drain excess grease), or sauté shredded chicken in 2 tablespoons of olive oil. Add all the ingredients and cook for an additional 10 minutes stirring occasionally. Let cool. COOKING: Preheat the vegetable oil in a frying pan at about a medium temperature. Place about 2 tablespoons of the filling in the dough and seal the edges with a fork. Deep fry for about 5 minutes on each side, then place on dish lined with paper-towels. Press another layer of paper towels over the top. Serve. Makes 12 Empanadas.

Recipe: Easy Fried Banana Pies If you're looking for something a little different to serve for dessert at weekend get-togethers, try these easy-to make Fried Banana Pies. • Get some large, firm, barely ripe bananas. Each banana will make four mini-pies. Barely ripe bananas will hold their texture better. • Get some Pepperidge Farm Puff Pastry dough. It comes in ready-to-use sheets in your grocery's freezer section. (I tried filo dough, but it's too fragile for me to work with. Your mileage may vary.) • You'll also need some honey, and/or brown sugar if desired, powdered confectioner's sugar, and vegetable cooking oil. 1. Peel and slice bananas in half longways, and then in half again crossways. 2. Lay out a sheet of puff pastry dough. I roll it out a little thinner to make it go further and make the pies less doughy. 3. Cut a square of pastry dough slightly longer than a banana piece, and place the banana on it. Put a little honey on the banana, and/or sprinkle a little brown sugar if desired, roll it up so it looks like an eggroll, then pinch all the seams and ends together to seal it. 4. Fry in a skillet with 1/4" or so of medium-hot cooking oil. Fry on each side until the dough is done to a crispy golden brown. 5. Remove from skillet and use a paper towel to absorb excess oil. Sprinkle with powdered confectioner's sugar. Serve hot, alone or with a scoop of vanilla ice cream or frozen yogurt. Yum!

2 cups all-purpose flour
½ cup shortening, chilled
1 teaspoon salt
½ cup cold water
2 apples
¼ cup white sugar, or to taste
⅛ teaspoon ground cinnamon, or to taste
oil for frying

Steps:

  • Sift flour and salt together. Cut in the shortening with a pastry blender until the mixture resembles coarse crumbs. Add cold water 1 tablespoon at a time and mix with fork. When the flour mixture is moistened, gather it into a ball, wrap it in plastic, and refrigerate for 30 minutes.
  • Peel and dice the apples and place them in a saucepan. Combine the sugar and cinnamon; pour over the apples and toss to coat. Cook, covered, in a saucepan on low heat. Cook until soft, then mash with fork to form a thick applesauce. Allow to cool.
  • Transfer the dough to a lightly floured work surface. Roll the dough out to 1/8 inch thick and cut rounds with a large cookie cutter (4 inches in diameter).
  • In each round, place 1 heaping tablespoon fruit. Moisten edges with cold water, fold in half, and press edge with a fork to seal. Repeat with the remaining pastry and filling.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Fry the pies, a few at a time, 2 to 3 minutes on each side; cook until the crust is golden brown. Drain on paper towels.

These are great little apple pies, & you can change the fruit to a different filling, I have made peach,blueberry, sweet potato, & pumpkin. They are really great.

1 pot of cooked apples
sugar to your taste
spices ( cinnamon, cloves, apple pie spice) to your taste
peanut oil for frying.

Steps:

  • 1. You can use dried fruit or fresh apples. You use your own judgement on how many apples to cook, to how many pies you want to make.
  • 2. I peel,core,& slice my apples. Put them in a sauce pan with very little water & cook slowly. The apples will make some juice their self. If you get too much liquid you can add a little cornstarch to the sugar to thicken. DON"T ADD The sugar until the apples has cooked.
  • 3. Take off the heat and let it get cooled off. You don't want it to be warm, it will mess the dough up.
  • 4. Sometimes I make my on crust, but most of the time I just use can biscuits. I get the store brand, they work best. DON"T get the buttermilk biscuits, get the home style. The name brand usually has kosher salt, it will make little holes in the crust when you fry them. So the store works best.
  • 5. Flour you pastry sheet, put a biscuit on it and roll out as if you're make a crust.Dampen the edge of the dough so it will seal off better. Place about 1 1/2 teaspoon of filling in the middle. It really depends on how much you roll the crust. You don't want it thick or too thin to tear when you're frying them. Dampen edge with water using your finger tip.
  • 6. Fold over the crust, take a fork and press around the edge, turn over and repeat the edge again.
  • 7. I use an electric skillet with peanut oil. Lay your pie in the skillet when you think the oil is hot enough. When you lay the pie in, it should start to sizzle around the edges. Fry it until golden brown, turn & fry on the other side.
  • 8. I usually have my skillet temp. around 300 degrees, but the temp can vary on different skillet, just keep a close eye, & don't burn them.
  • 9. Lay on paper towels to drain. I sprinkle with a sugar & cinnamon mixture in a salt shaker. Then enjoy!! Every time I take these pies for a get together, whether home or church, these pies disappear fast.

Tips:

  • Use a sturdy pie dough. A dough that is too thin or delicate will tear when you fry it. A good rule of thumb is to use a dough that is at least 1/4-inch thick.
  • Chill the dough before frying. This will help the dough to hold its shape and prevent it from becoming too greasy.
  • Use a deep fryer or large saucepan filled with oil. The oil should be at least 3 inches deep.
  • Fry the pies in batches. Do not overcrowd the pan, or the pies will not cook evenly.
  • Fry the pies until they are golden brown. This will take about 2-3 minutes per side.
