8 ounces bow-tie pasta
About 6 cups vegetable oil, for frying
1 teaspoon dried basil
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon dried oregano
1 teaspoon garlic powder
1/2 teaspoon red pepper flakes
1/2 teaspoon freshly ground black pepper
1/4 cup finely grated fresh Parmesan
One 24-ounce jar marinara, heated, for serving

Steps:

  • Bring a pot of salted water to a boil. Add the pasta and cook about a minute less than the recommended cooking time. Drain the pasta and spread it in a single layer on a baking sheet lined with parchment. Let cool and pat completely dry with paper towels.
  • Pour about 2 inches of oil into a large Dutch oven and heat over medium heat until a deep-fry thermometer reaches 375 degrees F.
  • Fry the pasta in 3 batches (about a cup each batch) until golden brown and crispy, 2 to 3 minutes.
  • Meanwhile, to a mini processor or spice grinder, add the basil, thyme, rosemary, oregano, garlic powder, red pepper flakes, black pepper and 1/2 teaspoon salt. Process until finely ground.
  • Remove the fried pasta from the oil, drain on paper towels, then sprinkle immediately with some of the seasoning mix. Repeat, working in batches, with the rest of the pasta and seasoning mix.
  • Put the fried pasta on a serving platter and sprinkle with the Parmesan. Serve alongside the warm marinara for dipping.

12 ounces rigatoni or mezzi rigatoni
Kosher salt
8 ounces high-quality bacon, coarsely chopped
4 large eggs
Freshly ground black pepper
4 large garlic cloves, thinly sliced
1 bunch kale or collard greens, thick stems removed, leaves torn into 1 1/2-inch pieces
1/4 cup finely grated pecorino or Parmesan cheese, plus more for serving

Steps:

  • Cook pasta in a large pot of salted boiling water until it's just al dente. (It should still have quite a bite to it; you'll finish cooking it in the skillet.) Drain, reserving 1 cup pasta water.
  • Meanwhile, cook the bacon in a large skillet over medium heat until it has rendered all its fat and the pieces are crispy, 5 to 7 minutes. Using a slotted spoon, transfer bacon to a paper towel-lined plate or bowl, leaving the fat behind in the skillet; set bacon aside.
  • Return the skillet with the bacon fat to medium-high heat. Crack the eggs into the skillet and season with salt and pepper. Fry the eggs, using a spoon to encourage the bacon fat to come up around the whites and cause them to puff slightly. Cook the eggs until the whites are just set and crisped around the edges and the yolk is still bright yellow and runny, about 3 minutes.
  • Using a spatula, transfer eggs to another paper towel-lined plate, leaving the bacon fat behind; set eggs aside.
  • Return the skillet with the bacon fat to medium heat and add the garlic. Cook, stirring occasionally, until it's softened and lightly browned, about 2 minutes. Add kale by the handful, letting it wilt between additions, and season with salt and pepper. Cook until the kale is totally wilted and softened, about 4 minutes.
  • Add pasta and 1/2 cup pasta water to the skillet, using a wooden spoon to scrape up any browned bits on the bottom. Season with salt and plenty of fresh ground pepper. Continue to cook at medium heat, tossing the pasta occasionally, until the sauce has thickened and reduced by about half, about 2 minutes.
  • Add remaining 1/2 cup pasta water and continue to cook, tossing to encourage the starches to release, until you've got a thick, glossy sauce, about 2 to 3 minutes. (The pasta should also be completely tender at this point.) Add 1/4 cup grated cheese and more freshly ground pepper; toss to coat.
  • Divide pasta among bowls and crumble crispy bacon over. Top with additional cheese and a fried egg. Make sure to break the yolk before eating.

Kosher salt
1/4 cup olive oil, plus more for drizzling
1/2 cup walnut pieces (optional)
2 large shallots, 1 medium onion or 1 large leek (white and light green parts), thinly sliced

Steps:

  • Cook pasta in a large pot of salted boiling water until al dente. Drain and rinse pasta with cool water to stop cooking and toss with a drizzle of olive oil to prevent sticking; set aside.

2 cups panko bread crumbs

1 lemon, zested and juiced
1 pound angel hair pasta
6 cups lightly packed wild arugula (Israeli if possible)
1/2 cup grated Parmigiano-Reggiano

Steps:

  • In a dry skillet over low heat, add 2 tablespoons of olive oil and the panko bread crumbs and toast until golden brown. Season with salt and pepper, to taste. Put into a bowl and set aside.
  • Set the skillet pan back over medium heat and add the remaining 1/2 cup of olive oil, the garlic and the red pepper flakes. Saute for 2 to 3 minutes to infuse the oil and cook the garlic. Season with salt and pepper, to taste. Add the lemon zest and remove from the heat.
  • In a large pot of well-salted boiling water, over medium heat, add the angel hair pasta and cook for 3 to 4 minutes. Drain and add to a large mixing bowl. While still warm, toss in the arugula, the infused oil, the bread crumbs and the cheese. Using tongs gently fold everything together and transfer to a large serving bowl or platter to serve. If desired, serve with braised braciole.

2 cups diced ripe, fresh tomatoes (2 medium tomatoes)

3 large sprigs fresh oregano or marjoram
2 pounds mussels, rinsed and debearded
1 tablespoon unsalted butter, at room temperature, cut into small pieces

Steps:

  • Bring a medium pot of heavily salted water to a boil. Add pasta and cook according to package directions until 2 minutes shy of al dente. Drain.
  • As pasta cooks, prepare the bread crumbs: In a large pot, heat 3 tablespoons oil over medium heat. Add capers and minced garlic, and let sizzle for 30 seconds. Add bread crumbs, and fry until both crumbs and capers are golden brown, about 2 minutes. Scrape the crumbs and capers onto a plate, and season to taste with salt.
  • Add remaining tablespoon oil to pot and let it get hot. Add sliced garlic and red-pepper flakes, and let sizzle until garlic is golden at the edges, 1 to 2 minutes. Stir in tomatoes and a pinch of salt and pepper. Cook until tomatoes have softened and start to lose their shape, about 6 minutes. Use a slotted spoon to transfer tomato solids to a small bowl, add lemon juice to taste, and set aside.
  • Add wine and oregano to the pot and bring to a simmer. Add mussels, cover and cook over medium heat, shaking the pot occasionally, until mussels have opened and are cooked through, about 4 to 7 minutes. Transfer mussels with a slotted spoon to a large bowl, and let cool slightly. Discard any unopened mussels.
  • Simmer the mussels liquid until reduced to a glaze, about 5 minutes. Discard oregano sprigs.
  • When mussels are still hot (but not too hot to handle), pull meat from shells and add to the pot with reduced mussel broth (discard shells). Add pasta, tomatoes and butter, and toss well. Taste and add more lemon juice and salt if needed.
  • Transfer mixture to a shallow serving bowl and toss with herbs. Top with bread crumb-caper mixture and serve.

  • Cook the pasta according to package directions, but for only half of the cooking time. Drain the pasta. Heat the oil in a frying pan over medium high heat. You need enough oil to cover the pasta, depending on the size of your pan probably around a 1/2 cup. Working in batches, fry the pasta until golden, flip & then fry until both sides are light golden brown. Remove from the pan and immediately season with salt. Repeat the process until all of the pasta is fried.

1 medium butternut squash
1 small sweet onion, peeled and diced
3 garlic cloves, minced
2 tablespoons olive oil
salt and pepper
1/2 cup fresh sage leaf
1 lb farfalle pasta
3/4 cup pine nuts, toasted
1 cup parmesan cheese

Steps:

  • Heat the oven to 375°.
  • Cut the butternut squash in half and scoop out the strings and seeds the middle cavity.
  • Flip the squash halves upside down and peel them.
  • Cut the squash into 1-inch cubes.
  • Toss with the onion, garlic, a drizzle of olive oil and salt and pepper.
  • Mince about half of the fresh sage leaves and also toss with the squash.
  • Spread the squash mixture in a thin layer on a large baking sheet and roast for about 40 minutes or until the squash is soft.
  • Heat salted pasta water to boiling and cook the farfalle until al dente.
  • Drain and set aside.
  • As the squash finishes roasting, heat about two tablespoons of olive oil in a large high-sided sauté pan.
  • The oil is ready when it pops and sputters. (Don't let it start smoking.)
  • Drop in the rest of the sage leaves and fry for about a minute, or until they begin to just shrivel up.
  • Remove with a slotted spoon and salt lightly.
  • Crush with the back of a spoon.
  • Add half the pasta to the pan, along with half the roasted squash mixture. Crumble in half the sage.
  • Cook, stirring frequently, for five minutes or until the pasta is heated through and getting crispy on some of the edges.
  • Add the pine nuts and cook for another minute.
  • Stir in half the cheese and serve.
  • (Repeat the last step with the rest of the ingredients. The originator of the recipe also wrote--We split it into two because none of our pans are big enough to accommodate the entire recipe. It's very important that you not crowd the pan too much - you want the pasta to really pan-fry, not just steam up.).

Pasta With Mushrooms, Fried Eggs and Herbs image

This fall-inspired, earthy pasta uses a combination of mushrooms for depth of flavor and is topped with a runny egg, which silkens up the sauce. Supermarkets these days generally have a good selection of different varieties such as cremini and shiitake, but if your standard white-button mushroom is all that's available, this dish will still be a winner. If you're not feeling pasta, the mushrooms are equally good served on top of creamy polenta or on their own. Red wine not optional.

Kosher salt
1 pound rigatoni or mezzi rigatoni
3 tablespoons olive oil, plus more for serving
4 large eggs
Black pepper
4 tablespoons unsalted butter
1 1/2 pounds mixed mushrooms such as cremini, white button and shiitake, trimmed and roughly torn or chopped
1 large shallot, finely chopped
2 garlic cloves, finely chopped
2 teaspoons thyme, finely chopped
1/2 teaspoon red-pepper flakes
1/4 cup grated pecorino or Parmesan, plus more for serving
1/4 cup roughly chopped Italian parsley, leaves and tender stems
2 tablespoons torn mint, for garnish (optional, but recommended)

Steps:

  • Bring a large pot of well-salted water to a boil and cook pasta until it's al dente, 1 to 2 minutes less than package directions. Drain, reserving 1 1/2 cups pasta water.
  • Meanwhile, heat 1 tablespoon olive oil in a nonstick skillet over medium heat. Crack the eggs into the skillet and season with salt and pepper. Fry until the undersides are golden and crispy and the yolk is still runny, 2 to 4 minutes. Using a spatula, transfer eggs to a paper towel-lined plate.
  • Heat 2 tablespoons of butter and the remaining olive oil in a 12-inch skillet over medium heat. Once the butter melts, add the mushrooms and sauté until deeply browned, about 12 to 15 minutes. Add the shallots, garlic, thyme and red-pepper flakes, and cook for 1 minute. Season well with salt.
  • Add the pasta to the skillet along with the remaining butter, grated cheese and 1 cup of the pasta water, tossing everything together until the butter melts and the sauce is glossy, 1 to 2 minutes. Add the parsley and toss again to combine, adding more of the pasta water as needed to loosen up the sauce.
  • Serve in bowls with a fried egg on top of each portion and scatter with the mint, if using. Pass additional grated cheese at the table and drizzle with a bit more of the olive oil if desired.

I needed to use up a head of cabbage and make something my kids might eat. My kids loved this dish. We have had it for dinner 3 times this month. We had a friend try it and he asked for the recipe.

1 lb rotini pasta or gluten free rotini
1 stick butter/margarine
1 medium onion, yellow
1 clove garlic
1 medium green cabbage, shredded
2 large carrots, grated
1 1/2 tsp salt
1/2 tsp pepper
1/2 tsp crushed red pepper (optional)

Steps:

  • 1. Bring a pan of water to a boil. Add pasta to boiling water. Cook until slightly undercooked. Drain and set aside.
  • 2. Slice a medium onion.
  • 3. Mince garlic.
  • 4. Quarter and core head of cabbage.
  • 5. Shred cabbage in food processor.
  • 6. Peel and shred carrots.
  • 7. Melt butter on medium in another large pan.
  • 8. Cook onion in melted butter for 5 min.
  • 9. Add minced garlic and cook for 30 sec.
  • 10. Add shredded cabbage and carrots.
  • 11. Stir to combine and cook for about 8-10min
  • 12. Season cabbage mixture with salt, pepper, and red pepper.
  • 13. Add pasta to cabbage mixture and continue to cook over medium heat while stirring.
  • 14. Cook until pasta is done.

1/2 pound leftover cooked spaghetti
1 tablespoon extra-virgin olive oil
1/4 - 1/2 cup prepared tomato sauce
Grated Parmesan cheese
2 carrots, peeled and sliced thinly lengthwise

Steps:

  • Toss pasta with tomato sauce just to completely coat. Heat a 12-inch cast-iron skillet over medium-low heat. Swirl in olive oil. Add pasta in one layer. Do not move -- leave it to crisp to a golden brown on one side, about 10-15 minutes. Turn onto plate. Top with grated Parmesan and cut into wedges. Serve with carrot slices on the side.

CHICKEN TENDERS
3 boneless, skinless chicken breasts, bite sized pieces
2 c all purpose flour
1 Tbsp garlic powder
1 Tbsp onion powder
1 Tbsp cajun seasoning
1/2 Tbsp salt
3 eggs beaten
1/2 c milk
vegetable or canola oil for frying
PASTA & SAUCE
2 Tbsp butter
1 box (12 oz.) bow tie pasta
1 small red onion, cut into thin strips
2 tsp minced garlic
1 can(s) (6 oz.) tomato paste
2 c alfredo sauce (jarred, mix, or homemade)
1 roasted red bell pepper, cut into thin strips
2 Tbsp white wine
cajun seasoning to taste
salt to taste
2 green onion, thinly sliced
1 c shaved parmesan
1/4 c fresh basil, coarsly chopped

Steps:

  • 1. Mix together flour, salt, and seasonings in a shallow bowl with wire wisk. In a separate bowl, wisk together milk and eggs until well blended.
  • 2. Coat a deep frying pan with about an inch and a half of oil. Heat over medium heat. When oil is hot, roll chicken in flour mixture, then dip in egg, then roll again in flour mixture. Fry in hot oil until golden brown. Repeat until all the chicken is done; set aside on an oven safe pan/plate and keep warm in the oven until pasta and sauce are done.
  • 3. Cook bow tie pasta according to package directions. While pasta is cooking start preparing sauce.
  • 4. To prepare sauce, heat butter over in a deep skillet over medium heat and add red onion, garlic to the pan. Saute until softened. Pour in alfredo sauce, tomato paste, butter and wine. Simmer over medium-low heat for Until well blended. Add Cajun seasoning. When pasta is done, drain and mix with sauce.
  • 5. To plate: Spoon pasta onto a plate or pasta bowl. Lay a few strips of chicken over the top. Sprinkle with sliced green onion, and shaved parmesan. Serve.

1/2 cup extra-virgin olive oil, plus 2 tablespoons
2 cups panko bread crumbs
Kosher salt and freshly ground black pepper
3 cloves garlic, slivered
1 teaspoon dried red pepper chili flakes
1 lemon, zested and juiced
1 pound angel hair pasta
6 cups lightly packed wild arugula (Israeli if possible)
1/2 cup grated Parmigiano-Reggiano

Steps:

  • In a dry skillet over low heat, add 2 tablespoons of olive oil and the panko bread crumbs and toast until golden brown. Season with salt and pepper, to taste. Put into a bowl and set aside. Set the skillet pan back over medium heat and add the remaining 1/2 cup of olive oil, the garlic and the red pepper flakes. Saute for 2 to 3 minutes to infuse the oil and cook the garlic. Season with salt and pepper, to taste. Add the lemon zest and remove from the heat. In a large pot of well-salted boiling water, over medium heat, add the angel hair pasta and cook for 3 to 4 minutes. Drain and add to a large mixing bowl. While still warm, toss in the arugula, the infused oil, the bread crumbs and the cheese. Using tongs gently fold everything together and transfer to a large serving bowl or platter to serve.

1 lb cooked ziti or penne
2 Tbsp olive oil
3 clove garlic
1 c marinara sauce
2 Tbsp butter
4 bunch scallions
1 onion
1 1/2 c mozzarella shredded
1/2 c shredded provolone
8 fresh basil leaves
1 Tbsp freshly chopped italian parsley
5 Tbsp asiago or parmesean cheese
1 tsp salt
1/2 tsp freshly ground pepper
1 tsp oregano
2 cooked italian sausage's

Steps:

  • 1. Cook Ziti al dente- drain and refrigerate to chill (can be done a day ahead of time). Transfer ziti to a cutting board and chop coarsely.
  • 2. In a large skillet, heat butter and olive oil, add scallions, onions and garlic, sauté briefly 1 minute.
  • 3. Add chopped ziti and sauté until the pasta starts to brown up and caramelize a bit -be sure to stir and shake the pan back or use a spoon to move the ziti around so you do not burn the pasta and you get some great color throughout the pasta.
  • 4. Once you have some great brown color on the Ziti, add salt, pepper, oregano and the fresh herbs than add the sauce mixing and begin sauteing for another few minutes or so. I like to add Cooked Sweet sliced Italian Sausage at this time. Next add a couple of table spoons of the Asiago cheese and fold in.
  • 5. Top the whole pan with the grated mozzarella and provolone evenly over the top along with the remaining Asiago cheese.
  • 6. Bake in a preheated oven 400 degrees cook pasta for 20-30 minutes until brown and a bit crisp on the sides. Serve with some garlic bread and enjoy!
  • 7. You can add any one of the following ingredients in place of the Sausage: Pepperoni- Diced Sautéed Mushrooms Fresh Spinach Meatballs (Cooked and Sliced) Sun dried Tomatoes

3 small or 1 large zucchini
1 lb linguine
1/2 cup of olive oil
2-3 cloves of garlic minced
salt and pepper to season

Steps:

  • Fry zucchini in pan one layer at a time, do not throw all zucchini in pan at the same time. Fry zucchini until browned on both sides, remove and place on your serving dish. Let oil cool a bit than add minced garlic, salt and pepper to pan saute until you can smell the garlic. Add to zucchini. Boil Pasta in salted water according to package directions. When pasta has reached the desired tenderness add 1 cup of the pasta water to the zucchini. Add pasta and toss.

Tips:

  • Use the right pasta. Short, sturdy pasta shapes like penne, rigatoni, or fusilli are best for frying, as they can hold their shape and won't fall apart.
  • Cook the pasta al dente. This means cooking it for a shorter amount of time than the package directions indicate, so that it still has a slight bite to it. This will help the pasta hold its shape when it's fried.
  • Use a well-seasoned pan. A cast iron skillet or a heavy-bottomed stainless steel pan is ideal for frying pasta. Make sure the pan is hot before adding the pasta, and don't overcrowd the pan.
