Kosher salt

1 cup (120 grams) all-purpose flour
2 large eggs
3 1/2 ounces (100 grams) oyster crackers (about 2 heaping cups)
1 teaspoon dried chives
1 teaspoon dried dill
1 teaspoon dried parsley flakes
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried thyme
Olive oil cooking spray

3/4 cup (172 grams) mayonnaise
1/4 cup (60 grams) finely chopped kosher dill pickles
1 tablespoon freshly squeezed lemon juice

Steps:

  • Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper.

5 tablespoons unsalted butter, melted
1/4 cup minced fresh chives
1/4 cup minced flat-leaf parsley

1 teaspoon onion powder

4 (6- to 8-ounce) fillets of cod, haddock, halibut or other white fish

Steps:

  • Heat the oven to 425 degrees. Put the crackers in a medium bowl and use your hand to crush them until they are finely crushed. (Some coarser bits are OK.) Add 4 tablespoons of the melted butter, the chives, parsley, lemon zest and onion and garlic powders, and stir to evenly combine, making sure to moisten all the crumbs.

24 shucked plump meaty oysters
2 large eggs, well beaten

Fry, making sure to turn them to get both sides, until golden brown, 1 to 2 minutes, depending on size. Remove with a slotted spoon or spider, and let rest on a clean rack while you fry the rest. Season each batch with a little salt while still piping hot, as soon as you pull them from the fat. Serve with tartar sauce.

1 cup finely crushed Chicken In A Biscuit crackers, more if needed
2 tablespoons olive oil

I won't pretend it's not a little bit of a project. There are bread crumbs to make, from a day-old French loaf. It's easy if you have a blender or food processor - just remove the crust and pulse the cubes into fluffy crumbs. My recipe also calls for clarified butter. It can be made ahead, it keeps, and it really makes a difference.

1 large, day-old French loaf or other hearth-style white loaf
1 cup all-purpose flour

24 shucked oysters, drained
