24 pickled jalapeno peppers
1 pound Cheddar cheese
½ cup yellow cornmeal
½ cup unbleached all-purpose flour
1 teaspoon salt
2 eggs, beaten
4 cups corn oil for frying

  • Cut a short slit into each jalapeno pepper. Remove as many seeds as possible. Slice Cheddar cheese into approximately 1/4 inch by 1 inch strips. Stuff each jalapeno with a Cheddar cheese strip.

2 jars (12 ounces each) whole jalapeno peppers, drained
1 jar (5 ounces) olive-pimiento cheese spread
3/4 cup all-purpose flour, divided
6 tablespoons cornmeal, divided
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup buttermilk
Oil for deep-fat frying

Steps:

  • Cut off stems and remove seeds from peppers. Stuff with cheese spread. Refrigerate for at least 2 hours., In a shallow bowl, combine 1/4 cup flour, 2 tablespoons cornmeal, salt, pepper and buttermilk until smooth; set aside. In another shallow bowl, combine remaining flour and cornmeal. Dip stuffed peppers into buttermilk batter, then dredge in flour mixture., In a deep cast-iron or electric skillet, heat oil to 375°. Fry peppers, a few at a time, until golden brown. Drain on paper towels.

8 oz. Cream Cheese, softened

Freshly Ground Black Pepper, to taste
1 Garlic Clove, minced
3 T. Fresh Cilantro, finely chopped
3 Eggs
1 Cup Bread Crumbs
Vegetable Oil, For deep-frying

Steps:

  • Directions: If using prawns, cook them in boiling water until they turn pink, about 1-2 minutes. Remove them from water and set aside. Place Jalapeños on a baking sheet under the broiler, turning occasionally until skins blisters and is lightly browned on all sides. Remove and place peppers in a sealed Ziploc bag. In a small bowl, combine cream cheese, cumin, salt, pepper, garlic, and cilantro. Beat eggs in a small bowl and set aside. Place bread crumbs in another small bowl. Remove Jalapeños from Ziploc bag and remove skins, Slice stem and cap off Jalapeños, removing seeds carefully. Cook bacon strips in a large frying pan until just cooked through. Set aside on a plate lined with paper towels. Stuff each pepper with cream cheese mixture and a cooked prawn. Wrap each pepper with one to two strips of bacon. Pour vegetable oil into a heavy saucepan and set over medium-high heat. Roll peppers in the eggs, then coat with bread crumbs.
