3 cups crushed cornflakes cereal
1 teaspoon ground cinnamon
3 egg whites
2 quarts oil for frying

Steps:

  • Scoop ice cream into 8 - 1/2 cup sized balls. Place on baking sheet and freeze until firm, about 1 hour.
  • In a shallow dish, combine cornflakes and cinnamon. In another dish, beat egg whites until foamy. Roll ice cream balls in egg whites, then in cornflakes, covering ice cream completely. Repeat if necessary. Freeze again until firm, 3 hours.
  • In deep fryer or large, heavy saucepan, heat oil to 375 degrees F (190 degrees C).
  • Using a basket or slotted spoon, fry ice cream balls 1 or 2 at a time, for 10 to 15 seconds, until golden. Drain quickly on paper towels and serve immediately.

This is the original Chi-Chi's Mexican Fried Ice Cream. You can serve this on the fried flour tortilla sprinkled with a cinnamon sugar mix as it was done in the later years or in a sherbet glass as it was in the early 80's. At one point we even offered these in chocolate and strawberry as well. Prep time is for the ice cream ball to harden.

1 (6 inch) flour tortillas
1/4 cup granulated sugar
4 teaspoons cinnamon
4 ounces French vanilla ice cream (by weight)
1/4 cup kellogg's corn flake crumbs
canned whipped cream
1 maraschino cherry
1 ounce honey

Steps:

  • Form 4 oz. of French vanilla into a ball.
  • Roll the ball of ice cream in the cinnamon sugar mixture until completely coated.
  • Roll in corn flake crumbs till coated.
  • Place in the freezer to harden.
  • Place the hardened ice cream ball in a fry basket and deep fry for 2 seconds at 350 degrees fahrenheit.
  • FOR THE SHERBET GLASS(the early years):.
  • Put a dollop of whip cream in the bottom of the glass.
  • Place the fried ice cream ball on top of the dollop.
  • Drizzle a small amount of honey over the top of the ice cream ball.
  • Place 8 whip cream rosettes around the ice cream ball and one on top.
  • Top with a maraschino cherry.

1 pint ice cream, any flavor
1 loaf sliced white bread
6 to 8 cups canola oil, for frying
1/2 cup sugar
2 teaspoons cinnamon

Steps:

  • Place a plate or sheet pan in the freezer and let it chill for at least 1 hour or overnight.
  • Using a large ice cream scoop, make balls of ice cream and place them on the sheet pan then return them to the freezer.
  • Cut the crusts off the sliced bread and using about 2 slices per ice cream ball, form the bread around the ice cream using your hands to pack it like a snow ball. Once it's completely covered return it to the freezer.
  • In a medium saucepan, heat 3 inches of canola oil to 365 degrees F. Drop the covered ice cream balls, one at a time, into the hot oil and fry, turning occasionally so they color evenly, until golden brown on all sides. Remove from oil and briefly drain on paper towels. Stir together the sugar and cinnamon. Coat fried ice cream in the cinnamon sugar mixture. Serve immediately.

4 candy bars (recommended: Mars Bars)

  • Heat the oil in a deep fat fryer to 375 degrees F (or in a large heavy-bottomed saucepan, pour enough oil to fill the pan about a third of the way. Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 375 degrees F.) If you don't have a thermometer, a cube of bread will brown in about 3 minutes.

1 box Betty Crocker™ Super Moist™ butter recipe yellow cake mix
Water, butter and eggs called for on cake mix box
1/2 cup unsalted butter
2/3 cup packed brown sugar
1/4 teaspoon salt
2 cups crushed corn flakes cereal
1 container Betty Crocker™ Rich & Creamy vanilla frosting
2/3 cup whipped cream
10 maraschino cherries
1/4 cup honey

Steps:

  • In 2-quart bowl, place softened ice cream. Add ground cinnamon beat with electric hand mixer until well blended. Place 1/2 can of dulce de leche in dollops on top of ice cream; use spoon to swirl into ice cream. Freeze until solid in bowl, about 4 hours.
  • Grease 2 (9-inch) round cake pans with shortening or spray with cooking spray. Make cake mix batter as directed on box. Add remaining half can of dulce de leche to batter; beat with mixer on low speed until blended. Divide batter evenly into pans. Bake as directed on box for 9-inch round pans. Cool cake completely.
  • While cake is cooling, make topping. In 10-inch nonstick skillet, cook butter and brown sugar over medium heat until butter is melted and sugar is well incorporated. Heat mixture until bubbly. Remove from heat. Stir in salt and cereal until cereal is coated. Pour cereal mixture into large cookie sheet with sides. Cool completely. When cool, break cereal topping apart with fingers.
  • Place vanilla frosting in medium bowl. Add half of the second can of dulce de leche; stir until well combined. Fill cooled cakes with frosting. Frost edge of cake; roll in cereal topping. Transfer cake to cake stand or serving plate.
  • Remove ice cream layer from freezer; turn out onto top of cake. Frost ice cream dome with frosting-dulce de leche mixture. Press cereal topping all over top. Around top edge of cake, add 10 mounds of whipped cream; place 1 cherry on top of each mound. Drizzle honey over entire cake. Sprinkle rainbow decors over top. Store cake in freezer.

Steps:

  • Crush cornflakes in a bag using a rolling pin until crumbs form.
  • Melt butter and add cornflakes, coconut, sugar, corn syrup, and cinnamon.
  • Roll ice cream into 3 inch balls. To roll the ice cream into balls, only thaw the ice cream slightly so you can easily roll it with your hands. You could even wear plastic gloves to make rolling the balls easier. Then roll the ball in the cornflake mixture. You may need to pack the mixture firmly around the ice cream ball.
  • Place the covered ball onto a cookie sheet lined with waxed paper.
  • Freeze until firm, about 4 hours.
  • When ready to serve, top with whipped cream, hot fudge and caramel.

1 scoop vanilla ice cream
1/2 cup frosted flakes, crushed
1 teaspoon cinnamon (optional)
1/2 cup confectioners' sugar (optional)
chocolate syrup, for drizzling on top (optional)
cherries, for top (optional)
vegetable oil, for frying

Steps:

  • Heat the vegetable oil in a large pot to 350.
  • While the oil is heating, take the Frosted Flakes, and put them into a Ziploc bag. Smash them until they are pea-size pieces.
  • Pour the Frosted Flakes into a large bowl.
  • Take the scoop of ice cream, and drop it into the bowl.
  • Roll the ice ceam around in the cereal until it is well coated, pressing the cereal into the ice cream.
  • Take the cereal covered ice cream ball, and drop it into the hot oil for 30-45 seconds.
  • Take the ice cream out of the oil, plate, and dust with cinnamon and confectionary sugar for a Mexican Fried Ice Cream, or drizzle chocolate on ice cream and top with a cherry for a Chinese Fried Ice Cream.
  • Serve immediately.

1 container of vanilla ice cream, 1/2 gallon or more
3 c honey and oats, golden grahams, or cinnamon toast crunch cereal
3 Tbsp butter
3 Tbsp sugar
1 Tbsp cinnamon

Steps:

  • 1. Scoop frozen ice cream out onto waxed paper lined baking sheet and place in freezer for an hour, or until hardened
  • 2. Meanwhile, place cereal in gallon zipper bag and crush
  • 3. Melt butter in microwave and stir in sugar and cinnamon, then pour into bag with cereal and seal. Knead with hands until well mixed.
  • 4. Pour cereal onto a lined baking sheet and place in the oven at 350 degrees, just until toasted about five minutes. Watch as cereal can burn easily
  • 5. Remove cereal from oven and allow to cool. Roll hardened ice cream balls in mixture, pressing lightly as you do so.
  • 6. Place coated ice cream in 9x13 dish and return to freezer or serve immediately with honey drizzled on and top with whipped cream and a cherry

10 cups corn flakes, crushed
1 cup coconut flakes
8 tablespoons (1 stick) unsalted butter, melted
2 tablespoons granulated sugar
2 teaspoons cinnamon
1 quart vanilla ice cream
1 quart strawberry ice cream
1 quart chocolate ice cream
Fried Sweet Dough, recipe follows
Chocolate sauce, for serving
2 quarts (8 cups) canola oil
2 sheets prepared croissant dough, cut into 2-inch squares
1 cup confectioners' sugar
2 tablespoons cocoa powder

Steps:

  • Preheat the oven to 325 degrees F.
  • Combine the corn flakes, coconut flakes, butter, granulated sugar and cinnamon on a large baking sheet and bake until golden and crisp, about 8 minutes.
  • Use a 2-inch scoop to scoop 4 balls from each flavor of ice cream. Roll to coat the balls in the corn flake mixture on all sides and freeze for at least 30 minutes and up to overnight.
