Number Of Ingredients 22

Aioli:
1/4 cup olive oil
1/2 cup blended oil
1 clove garlic, roughly chopped
3 egg yolks or 9 Tbsp pasteurized egg substitute
2 tsp lemon juice
1/2 tsp Dijon mustard
1/2 tsp kosher salt
1/4 tsp ground black pepper
1 Tbsp fresh oregano, chopped
1/4 cup fresh basil, chopped
Tomatoes:
4 green tomatoes, ends removed and sliced 1/4" thick
1/2 cup cornmeal
1/4 cup Parmesan cheese, grated
1/8 tsp cayenne pepper
1-1/2 tsp kosher salt, divided
3/4 tsp ground black pepper, divided
1 tsp dried basil
1 tsp dried oregano
1/4 cup flour
2 eggs

Steps:

  • To prepare the aioli, combine the olive oil and the blended oil in a measuring cup. Set aside. Place the garlic, egg yolks, lemon juice, Dijon mustard, salt, and pepper in a blender. Pulse the ingredients until combined. Slowly pour the oil through the opening at the top of your blender. (The speed should be on low.) After the ingredients are well-blended and creamy, use a spatula to scoop the aioli into a small bowl. Fold in the fresh basil and oregano. To prepare the tomatoes, combine the cornmeal, Parmesan cheese, cayenne pepper, 1 tsp of salt, 1/2 tsp of black pepper, dried basil, and dried oregano into a medium-size bowl. Set aside. Combine the flour and the remaining salt and pepper into a second bowl. Set aside. Whisk the eggs together in a third bowl. First, dip the tomatoes in the flour mixture; coat completely. Then coat the tomatoes in the egg. Finally, dredge the slices in the cornmeal mixture and coat completely. Pour about 1/4" of oil into a large skillet set over medium heat. After the oil is ready, add in the tomatoes (in batches, if necessary). Fry the tomatoes until golden brown on one side for about 3-4 minutes. Flip the tomatoes and cook until brown on the other side. Remove the slices from the oil and drain on paper towels. Serve immediately with the aioli.

FRIED GREEN TOMATOES

Fried Green Tomatoes image

This seasonal southern recipe for fried green tomatoes is from Amy Goldman.

Provided by Martha Stewart

Categories     Food & Cooking     Dinner Recipes     Dinner Side Dishes

Number Of Ingredients 10

8 medium (about 3 1/2 pounds) green tomatoes
3 1/2 teaspoons coarse salt
1 3/4 teaspoons freshly ground black pepper
5 large eggs, beaten
1/2 cup milk
3 cups all-purpose flour
4 cups panko (Japanese breadcrumbs)
1/2 cup cornmeal
4 cups olive oil
Aioli, for serving

Steps:

  • Trim 1/2-inch from the stem and blossom ends of tomatoes. Slice tomatoes 1/4-inch thick. Season tomato slices with 2 teaspoons salt and 1 teaspoon pepper; set aside.
  • In a shallow bowl, whisk together eggs and milk; set aside. In a second shallow bowl, whisk together flour, 1/2-teaspoon salt, and 1/4-teaspoon pepper; set aside.
  • Place panko in a shallow bowl along with cornmeal, remaining teaspoon salt, and 1/2-teaspoon pepper; stir to combine and set aside.
  • Working with one tomato slice at a time, coat tomatoes with flour mixture, shaking off excess. Coat with egg mixture, followed by breadcrumb mixture. Transfer to a wire rack set over a parchment-lined baking sheet; repeat process with remaining slices.
  • Heat 2 cups oil in a 10-inch skillet over medium-high heat until it reaches 350 degrees on a deep-fry thermometer. Working in batches, carefully place tomatoes into the heated oil in a single layer. Fry until golden, turning once, 2 to 3 minutes per side. Drain on a paper towel-lined baking sheet. After frying half of the tomato slices, discard oil and heat remaining 2 cups oil in skillet; continue frying remaining tomato slices. Serve tomatoes immediately with aioli.

Tips:

  • Choose firm, ripe green tomatoes for frying. Unripe tomatoes will be too sour, while overripe tomatoes will be too soft and mushy.
  • Slice the tomatoes about 1/2-inch thick. Thicker slices will take longer to cook and may not get as crispy.
  • Dredge the tomato slices in flour, then eggs, then breadcrumbs before frying. This will help them to get a golden brown crust.
  • Fry the tomato slices in hot oil until they are golden brown and crispy on both sides. Don't overcrowd the pan, or the tomatoes will not cook evenly.
  • Drain the fried tomato slices on paper towels to remove any excess oil.
  • Serve the fried green tomatoes with your favorite dipping sauce, such as garlic basil aioli, ranch dressing, or ketchup.

Conclusion:

Fried green tomatoes are a delicious and versatile dish that can be enjoyed as an appetizer, side dish, or main course. They are a great way to use up fresh tomatoes from the garden, and they can be made ahead of time and reheated when you're ready to serve them. So next time you have a few green tomatoes on hand, give this recipe a try!
