8 green tomatoes
5 cups canola oil or 6 cups vegetable oil
1 cup bacon drippings
3 cups all-purpose flour
2 1/2 cups milk
2 large eggs
1/2 cup cornmeal
1 tablespoon salt
1 tablespoon celery salt
1 tablespoon ground black pepper
1 teaspoon onion powder
1 pinch paprika

  • De-core and cut the ends off the green tomatoes.
  • Slice tomatoes into 1/2 inch thickness and set aside in a medium-sized bowl.
  • In a small bowl, set aside only 1 1/2 cups of the flour.
  • In a medium bowl, mix the milk and eggs to create an egg wash.
  • In a large bowl, combine remaining flour, cornmeal and salt.
  • Add celery salt, pepper, onion powder and paprika.
  • This is the cornmeal breading mixture for the tomatoes.
  • Line a sheet pan with parchment paper to place the breaded tomatoes on after the final dredging.
  • Begin the dipping process by dredging the tomatoes in the flour, then the egg wash, and finally through the cornmeal breading mixture.

4 cups panko (Japanese breadcrumbs)
1/2 cup cornmeal
4 cups olive oil

KAREN'S FRIED GREEN TOMATOES

Karen's Fried Green Tomatoes image

This recipe comes from my mom and they are, hands down, the best fried green tomatoes. She makes these every summer with fresh tomatoes from her garden. My sister begs her to make them for her as soon as she sees tomatoes growing big and green on the vines. While most recipes call for breadcrumbs and oil, this one calls for flour and has you fry the tomatoes in butter, which helps give these an incredible flavor.

Time 30m

Yield 4

Number Of Ingredients 8

2 large green tomatoes, sliced 1/3-inch thick
2 teaspoons white sugar
½ teaspoon salt
¼ teaspoon ground black pepper
½ cup milk
2 eggs
1 ¼ cups all-purpose flour
1 cup butter

Steps:

  • Season each tomato slice with sugar, salt, and pepper.
  • Beat milk and eggs together in a bowl. Pour flour into another bowl.
  • Gently press each tomato slice into flour to coat; shake off the excess flour. Dip tomato slices into egg mixture, then press again into flour. Place breaded tomato slices onto a plate while breading the rest; do not stack.

Tips:

  • Choose firm, green tomatoes for frying. Heirloom varieties, such as Cherokee Purple or Green Zebra, work well.
  • Slice the tomatoes about 1/2-inch thick. Thicker slices will take longer to cook and may not get crispy.
  • Dredge the tomatoes in flour, then in beaten eggs, and then in bread crumbs. This will help the coating adhere to the tomatoes.
  • Use a large skillet or griddle over medium-high heat. Add enough oil to cover the bottom of the pan.
  • Fry the tomatoes in batches until they are golden brown and crispy on both sides.
  • Drain the tomatoes on paper towels to remove excess oil.
  • Serve the fried green tomatoes hot with your favorite dipping sauce.

Conclusion:

Fried green tomatoes are a delicious and versatile dish that can be enjoyed as an appetizer, side dish, or main course. They are a great way to use up those green tomatoes that are taking over your garden. With a few simple ingredients and a little bit of time, you can create a delicious and memorable meal.
