4 large green tomatoes
2 eggs
½ cup milk
1 cup all-purpose flour
½ cup cornmeal
½ cup bread crumbs
2 teaspoons coarse kosher salt
¼ teaspoon ground black pepper
1 quart vegetable oil for frying

Steps:

  • Slice tomatoes 1/2 inch thick. Discard the ends.
  • Whisk eggs and milk together in a medium-size bowl. Scoop flour onto a plate. Mix cornmeal, bread crumbs and salt and pepper on another plate. Dip tomatoes into flour to coat. Then dip the tomatoes into milk and egg mixture. Dredge in breadcrumbs to completely coat.
  • In a large skillet, pour vegetable oil (enough so that there is 1/2 inch of oil in the pan) and heat over a medium heat. Place tomatoes into the frying pan in batches of 4 or 5, depending on the size of your skillet. Do not crowd the tomatoes, they should not touch each other. When the tomatoes are browned, flip and fry them on the other side. Drain them on paper towels.

1 cup all-purpose flour
2 cups Italian breadcrumbs
4 cups water
2 tablespoons dry crab boil seasoning
1 onion, sliced
1 lemon, sliced
2 ounces hot sauce (recommended: Crystal)
8 large shrimp, shell on
1/2 cup mayonnaise
1 ounce Creole mustard
1/2 ounce horseradish
1/2 ounce lemon juice
1 teaspoon Worcestershire sauce
2 slashes hot sauce (recommended: Tabasco)
Shredded lettuce, for serving

Steps:

  • For the tomatoes: Heat the oil in a deep frying pan or cast iron skillet to 350 degrees F. Beat the eggs, milk, and hot sauce in a shallow dish. Put the flour and breadcrumbs in 2 separate shallow dishes. Dip the tomato slices in the flour, then the egg wash, and then the breadcrumbs. 3/4 cup quick-cooking grits
Kosher salt and freshly ground pepper
4 slices bacon
4 large eggs
1 cup grated cheddar cheese

Steps:

  • Grate 3 tomatoes into a bowl, discarding any remaining skin. Chop the remaining tomato and set aside. Bring 3 cups water to a boil in a medium saucepan. Add the grits and the grated tomatoes; reduce the heat to medium and cook, stirring occasionally, until thickened, about 5 minutes. Season with salt and pepper. 8 medium (about 3 1/2 pounds) green tomatoes
3 1/2 teaspoons coarse salt
1 3/4 teaspoons freshly ground black pepper
5 large eggs, beaten
1/2 cup milk
3 cups all-purpose flour
4 cups panko (Japanese breadcrumbs)
1/2 cup cornmeal
4 cups olive oil
Aioli, for serving

Steps:

  • Trim 1/2-inch from the stem and blossom ends of tomatoes. Slice tomatoes 1/4-inch thick. Season tomato slices with 2 teaspoons salt and 1 teaspoon pepper; set aside.
  • In a shallow bowl, whisk together eggs and milk; set aside. In a second shallow bowl, whisk together flour, 1/2-teaspoon salt, and 1/4-teaspoon pepper; set aside.
  • Place panko in a shallow bowl along with cornmeal, remaining teaspoon salt, and 1/2-teaspoon pepper; stir to combine and set aside.

This came together one summer when I had a great deal of green tomatoes and wanted to try something different for dinner. My daughter and I love grits with bacon so this was invented. Hope you enjoy it as much as we do!

8 slice green tomatoes
2 eggs beaten with milk
3/4 c flour
1/2 c cornmeal
1/2 lb bacon
GRITS
2 c water
1 1/4 c milk
1 c grits, quick-cooking
1 tsp salt
2 Tbsp butter

Steps:

  • 1. Fry bacon until crisp in skillet, cast-iron if you have it, save the bacon grease. Drain on paper towel. Crumble up when cool.
  • 2. Combine flour and cornmeal, adding salt and pepper to taste. Beat eggs and add milk to make egg-dip.
  • 3. Heat the skillet you fried the bacon in, you may add more oil if needed to the skillet. Coat green tomato slices in flour mixture, then dip in egg, then coat with flour mixture again. Put in hot skillet and fry until golden on each side, drain on paper towel.
  • 4. In a medium pot, bring the water, milk, and salt to a boil. Slowly stir the grits into the boiling mixture. Stir continuously and thoroughly until grits are well mixed. Let the pot return to a boil, cover with a lid, lower the temperature, and cook for approximately 30 minutes, stirring occasionally. Add more milk if necessary. Grits should be creamy but not runny. Stir in the butter.
  • 5. Place 4 green tomato slices on a plate. Put a heaping spoonful of grits on top and sprinkle the cumbled bacon evenly on the two plates.

Tips:

  • Choose firm, ripe green tomatoes for frying. Unripe tomatoes will be too sour, while overripe tomatoes will be too soft.
  • Slice the tomatoes about 1/2 inch thick. If the tomatoes are too thick, they will not cook evenly. If they are too thin, they will fall apart.
