1 lb okra, sliced
1 large green tomato, unpeeled and chopped into bite size pieces
salt and pepper
3/4 cup plain cornmeal
1/4 cup plain flour
1/2 cup oil

Steps:

  • Combine okra and tomato in a bowl.
  • Season with the salt and pepper.
  • Mix the cornmeal and flour and toss the veggies in this mixture until coated.
  • Heat oil in a large skillet over mediun-high heat.
  • Add okra and tomatoes.
  • Cook, stirring and turning occasionally, until crisp and browned- about 15-20 minutes.
  • Remove okra and tomatoes to a serving platter which has been covered with a paper towel to drain.
  • Serve and heat while hot.

3 to 4 green tomatoes
1/2 c all purpose flour or 1/2 cup cormeal
2 eggs
salt and pepper
1 dash(es) garlic powder
1/2 to 3/4 c cooking oil

Steps:

  • 1. Slice green tomatoes into slices about 1/4 inch thick. In a bowl beat eggs with a whisk.
  • 2. In another bowl add salt and pepper and garlic powder to the meal or flour whenever you decide to use for breading.
  • 3. There is really not that much difference. I usually have a bowl of cornmeal and i do about half the tomatoes in flour and half in meal.
  • 4. You can do the okra the same way or just use either one.Dip the tomato slices into the egg and then the meal or flour.
  • 5. Have your oil hot and deep enough in the skillet to cover about half the tomato slice. Cook on one side turn and continue cooking until golden brown. Drain on paper towels.
  • 6. For okra cut okra into 1/4 inch pieces and dip into egg and then flour or meal. Cook just like you did the tomatoes.

Tips:

  • Choose firm, unblemished green tomatoes for frying. Larger tomatoes can be sliced into rounds, while smaller ones can be fried whole.
