BAKED FRIED GREEN TOMATOES

1 cup all-purpose flour
1 1/2 teaspoons fine sea salt
1 1/2 teaspoons Cajun or Creole seasoning
2 cups panko breadcrumbs
1 cup buttermilk
3 large unripe (green) tomatoes, sliced into 1/4-inch-thick slices
Nonstick cooking spray, for the tomatoes
1 clove garlic, minced
Fine sea salt
1 large egg yolk (from a pasteurized egg)
2 teaspoons lemon juice
1 teaspoon Dijon mustard
1/3 cup extra-virgin olive oil
1/4 cup neutral oil, such as canola
1/2 teaspoon Cajun seasoning

Steps:

  • For the tomatoes: Preheat the oven to 375 degrees F. Line 2 sheet pans with parchment paper.
  • In a large flat bowl or pie plate, whisk together the flour, 1/2 teaspoon of the salt and 1/2 teaspoon of the Cajun seasoning. Put the breadcrumbs into a second pie plate and season with the remaining 1 teaspoon salt and 1 teaspoon Cajun seasoning. Pour the buttermilk into a third pie plate. Pat the tomato slices dry with a paper towel. Dredge them first in the flour mixture, shaking off any excess, then in the buttermilk, and then finally in the panko, patting to coat completely. Place onto the lined sheet pans, spaced about 1 inch apart. Spray the tops lightly with nonstick spray.
  • Bake for about 15 minutes, then flip the tomatoes, spray the tops lightly with nonstick spray, rotate the pans and bake until golden brown, an additional 15 minutes.
  • For the Cajun-spiced aioli: Meanwhile, sprinkle the minced garlic with salt and use the back of a knife to press it into a paste. Add the garlic and egg yolk to a stainless steel bowl along with the lemon juice and Dijon mustard; whisk to combine. Combine the oils in a container with a spout that will allow for easy controlled pouring. While whisking constantly, slowly add the oil in a slow steady stream (see Cook's Note). Stir in the Cajun seasoning and add salt to taste.
  • Serve the tomatoes on a platter with a bowl of the Cajun-spiced aioli.

5-6 medium green tomatoes (diced into 1-2 in chunks)
3 c bread crumbs (separated)
1/2 c corn meal
1 c buttermilk
1 large egg
1 stick unsalted butter (separated, melted)
1/2 c parmesan cheese grated

Steps:

  • 1. Preheat oven to 400. Melt 1/2 of a stick of butter in a 2 qt casserole dish and 1/2 of a stick of butter in a separate microwave safe cup
  • 2. Chop green tomatoes into 1-2 inch chunks. In a mixing bowl whip egg and buttermilk together. Add tomatoes to bowl and coat well
  • 3. Place 2 cups of the bread crumbs and corn meal in a gallon size bag, shake to mix, add tomato dices and shake to coat completely
  • 4. Add coated tomato dices to casserole dish and pour remaining melted butter over.
  • 5. Add remaining 1 cup of bread crumbs and. One meal, sprinkling over the top, then add Parmesan cheese, sprinkling over the top
  • 6. Bake for 30 min till golden brown on top and enjoy!!

green tomatoes, either 4 large ones or small tomatoes to equal about 22 ounces
1 tsp sugar, divided
1 tsp salt
pepper
2/3 c seasoned breadcrumbs, divided
1/3 c panko breadcrumbs
1 1/2 c shredded sharp cheddar cheese
2 Tbsp butter

Steps:

  • 1. Slice all of the tomatoes. Arrange 1/3 of the tomatoes in the bottom of a pie pan or 8x8 baking dish. Sprinkle with 1/3 of salt, 1/3 of sugar, and a little pepper. Top with 1/3 cup of seasoned breadcrumbs and 1/2 cup cheese.
  • 2. Add second layer of tomatoes and sprinkle with 1/3 of salt, 1/3 of sugar, and a little pepper. Top with panko breadcrumbs and 1/2 cup cheese.
  • 3. Repeat the layers one more time- tomatoes, 1/3 of salt, 1/3 of sugar, and a little pepper, seasoned breadcrumbs and omit the cheese on the last layer at this point.
  • 4. Dot the butter on the top of the last breadcrumb layer. Bake at 400F for 60 minutes. Add the remaining cheese and bake for about 5-10 more minutes, until the cheese is melted and starting to brown.

8 medium (about 3 1/2 pounds) green tomatoes
3 1/2 teaspoons coarse salt
1 3/4 teaspoons freshly ground black pepper
5 large eggs, beaten
1/2 cup milk
3 cups all-purpose flour
4 cups panko (Japanese breadcrumbs)
1/2 cup cornmeal
4 cups olive oil
Aioli, for serving

Steps:

  • Trim 1/2-inch from the stem and blossom ends of tomatoes. Slice tomatoes 1/4-inch thick. Season tomato slices with 2 teaspoons salt and 1 teaspoon pepper; set aside.
  • In a shallow bowl, whisk together eggs and milk; set aside. In a second shallow bowl, whisk together flour, 1/2-teaspoon salt, and 1/4-teaspoon pepper; set aside.
  • Place panko in a shallow bowl along with cornmeal, remaining teaspoon salt, and 1/2-teaspoon pepper; stir to combine and set aside.
  • Working with one tomato slice at a time, coat tomatoes with flour mixture, shaking off excess. Coat with egg mixture, followed by breadcrumb mixture. Transfer to a wire rack set over a parchment-lined baking sheet; repeat process with remaining slices.
  • Heat 2 cups oil in a 10-inch skillet over medium-high heat until it reaches 350 degrees on a deep-fry thermometer. Working in batches, carefully place tomatoes into the heated oil in a single layer. Fry until golden, turning once, 2 to 3 minutes per side. Drain on a paper towel-lined baking sheet. After frying half of the tomato slices, discard oil and heat remaining 2 cups oil in skillet; continue frying remaining tomato slices. Serve tomatoes immediately with aioli.

2 tablespoons unsalted butter
1/2 bunch celery, including leaves, coarsely chopped
1 shallot, skin-on, sliced
1/2 small onion, skin-on, sliced
3 peppercorns, crushed with the back of a knife
1 small bay leaf
1 sprig fresh thyme, plus 1 teaspoon fresh thyme leaves
Coarse salt and freshly ground black pepper
1 1/2 cups fresh cream
3 to 4 pounds green tomatoes
Fresh breadcrumbs from 1 baguette

Steps:

  • Heat 1 tablespoon butter in a small saucepan over medium heat. Add celery, shallot, onion, peppercorns, bay leaf, and thyme sprigs, and season with salt; cook, stirring, until vegetables are soft and translucent.
  • Add cream and bring to a simmer; remove from heat and let steep 15 to 20 minutes. Strain cream into a small container with a spout, gently pressing on solids to extract flavor. Discard solids and set cream aside.
  • Using remaining tablespoon butter, butter a 9-by-7-inch or 2-quart baking dish; set aside. Using a mandolin, very thinly slice tomatoes into 1/16-inch slices, discarding any irregular or unusable pieces. Layer tomatoes close together and slightly overlapping so that they cover bottom of entire dish; season with salt and pepper. Repeat process, making 5 layers of tomatoes and seasoning between each. Let stand 15 minutes.
  • Preheat oven to 325 degrees.
  • Using a second baking dish about the same size as the one containing the tomatoes, press down on surface of tomatoes and drain any liquid that has accumulated in the dish; discard liquid and remove second baking dish.
  • Top tomatoes with breadcrumbs; do not press down. Evenly pour reserved cream over top so that breadcrumbs are moistened. Transfer to oven and bake until breadcrumbs are golden brown and tomatoes are tender, 40 to 50 minutes. Top with fresh thyme leaves and serve immediately.

1 teaspoon sugar
1 teaspoon salt
1/2 teaspoon pepper
2 cups soft breadcrumbs
1 cup of shredded sharp cheddar cheese
