These have also been called pigs' ears. Over the years I have perfected the recipe to the point where I and my friends no longer go out to get them. I just make 'em at home! Enjoy, EH!

½ cup warm water (110 degrees F/45 degrees C)
5 teaspoons active dry yeast
1 pinch white sugar
1 cup warm milk (110 degrees F/45 degrees C)
⅓ cup white sugar
1 ½ teaspoons salt
1 teaspoon vanilla extract
3 beaten eggs
⅓ cup vegetable oil
5 cups whole-wheat flour, divided
1 quart vegetable oil for frying
2 cups white sugar
½ teaspoon ground cinnamon, or to taste

Steps:

  • Mix warm water, yeast, and 1 pinch of sugar in a large bowl, and let stand until the yeast begins to foam and form a creamy layer, about 5 minutes. Stir in milk, 1/3 cup sugar, salt, vanilla extract, eggs, and 1/3 cup vegetable oil until the sugar has dissolved. Mix in about half the whole-wheat flour, and stir until the dough is too stiff to add more flour. Turn the dough out onto a floured surface, and knead in more flour until the dough is no longer sticky. Knead until smooth and elastic, about 10 minutes. Form the dough into a ball, place into an oiled bowl, and cover. Let rise until the dough has doubled in size, about 1 hour.
  • Punch down the dough, knead a few times to reshape it, and pinch off a piece of dough about the size of an egg. Roll the dough ball out into an oval shape about 1/4 inch thick. Place finished fried dough on a cloth and cover while you finish rolling out the pastries.
  • Heat oil in a deep-fryer or large, deep skillet to 375 degrees F (190 degrees C). Oil should be at least 4 inches deep. Combine 2 cups of sugar with cinnamon to taste in a shallow dish or pie plate, and set aside.
  • Gently lower the pastries, one at a time, into the hot oil, and fry 1 to 2 minutes per side until golden brown. Blot excess oil from fried pastries with paper towels; gently press each pastry into the cinnamon sugar while still warm. Shake off excess sugar.

1/2 cup sugar
2 tablespoons ground cinnamon
2 tablespoons roasted and crushed sesame seeds
1 tube Pillsbury original biscuit dough
4 cups Crisco shortening

Steps:

  • Mix the sugar, cinnamon, and sesame seeds in a medium-size bowl.
  • Pop open the tube of dough and pull apart the biscuits-they come preportioned, so this will be easy. In a big, heavy pot, heat the shortening over high heat; you'll know it's ready when a tiny piece of biscuit dough sizzles when added to the oil. Fry the biscuit dough until each piece becomes puffy and brown on all sides, about 2 minutes. Flip the pieces over and fry them for 2 minutes more.
  • Pull out the doughnuts and rest them on paper towels for a minute or two, then toss them immediately in the sugar mixture.
  • Repeat. Eat. Get bloated.

It doesn't take long to make if you have those little dough presses that make the crimped edges. This came from my efforts to make fritters for my husband like his mom used to make. Success!! :)The cook time will be different depending on filling, so it is an estimated time for fried pies. Cooking fillings for hot pockets will increase prep and cook time.

1 tablespoon sugar

1 teaspoon baking powder
1/3 cup shortening
1 cup milk (more if needed)

Steps:

  • In a mixing bowl, sift the flour, sugar, salt and baking powder, together.
  • Cut in shortening.
  • Pour the milk into the flour mixture all at once.
  • Mix quickly and add additional milk if needed to combine all dry spots or flour if it is to sticky.
  • Lightly knead it to make a thick dough.
  • Let the dough rest for 10 minutes.
  • Cut the dough into 12 equal portions.
  • On a lightly floured surface, roll the dough pieces into 5 or 6 inch circles.
  • Put two or three tablespoons of filling of your choice in the center of each round, moisten edges with milk to ensure seal.
  • Fold over and crimp the edges with a fork.
  • Fry a few at a time without crowding, in the hot oil, until golden brown.
  • Remove from the oil and drain on paper towels.
  • Notes: Although this dough can be used to make homemade"hot pockets" the filling should be completely done before enclosing it in the dough.
  • The dough will cook too fast to get the insides done.
  • I find it best to place paper towels on a wire rack so the pies remain light and crisp and don't get soggy from the steam.
  • If you are using the dough for fried pies, it will use one 21 ounce can @ approximately two tablespoons per pie.
  • Pies should be sprinkled as soon as they are removed from oil so the sugar will stick.
  • (Sugar and cinnamon mix is great on apple pies.).

  • Mix the flour, baking powder, and salt. Work in the cold butter, using a pastry blender, your fingers, or a mixer. Stir in the warm water to make a soft dough. Cover and let rest for 15 minutes. Divide the dough into eight pieces. Working with one piece at a time, roll into a thin 5" round. Heat 1/4" vegetable oil to 375°F in an electric frying pan, or in a pan over a burner. If you're not using an electric frying pan, you'll have to guesstimate the temperature of the oil in your stove-top pan. Pick up one dough disk, and carefully lower it into the pan. Let it cook for 45 to 60 seconds (it'll puff up on top and become brown on the bottom), then flip it over and cook till brown on the other side, about 45 seconds. Remove from the oil and set on a paper towel-lined baking sheet. Place in a 200°F oven to keep warm while you make the remaining fried doughs. Serve warm, with maple syrup or cider syrup; confectioners' sugar, or cinnamon sugar; or the topping of your choice.

  • Break off ~2" pieces of dough.

1 lb prepared pizza or bread dough (you can purchase this at your local grocery store, or make your own)
vegetable or canola oil for frying
large frying pan with deep sides

Steps:

  • 1. Pour about 1" of oil into frying pan, and heat to medium-high. (A tip for knowing when your oil is ready: tear off a tiny piece of bread and when it floats to the top and has bubbly sides it's ready. You don't want it sinking to the bottom.)
  • 2. Place dough on floured board and press down to even out a bit. Cut into 8 equal pieces. Put a little flour on your hands (so the dough won't stick) and gently stretch out the dough as far as it will go, without ripping it.
  • 3. Carefully place into the hot oil, cook about a minute (goes fast) or until the side down is golden, then turn over and brown the other side. (Never leave the stove when you're frying something. I learned the hard way, and burned down my first house. Yeah, true story!)
  • 4. Use tongs to remove onto a paper towel or brown paper bag, to drain off any excess oil. Immediately sprinkle on cinnamon sugar or powdered sugar or spread on some butter, and various other toppings, if desired. Serve warm.

a metal or plastic churrera fitted with a 3/4-inch star opening, and a pair of chopsticks

Steps:

  • Prepare frying oil:
  • Heat 2 inches oil in a 4-quart Dutch oven or a wide 4-inch-deep heavy pot over high heat until a deep-fat thermometer registers 400°F (oil will be just beginning to smoke). Drop in citrus peel (oil will bubble vigorously) and leave in oil until browned, about 1 minute. Remove with tongs.
  • Prepare dough:
  • While oil is heating, bring water with salt to a boil, covered, in a 1 1/2- to 2-quart heavy saucepan. Add 2 teaspoons olive oil and remove from heat. Immediately add flour and stir vigorously with a wooden spoon until flour and water are combined well (mixture will be stiff and not very smooth). Fill churrera with some hot dough and wrap a kitchen towel around churrera canister to protect your hands.
  • Make churros:
  • Turn screw handle of churrera until dough emerges from star opening. Holding opening about 2 inches above oil, turn handle to squeeze dough into oil in a continuous stream, making a spiral shape. (Spirals take practice; have a helper coax dough into a spiral in oil with a chopstick, keeping dough away from side of pot. For beginners, small coils or any kind of curvy shape is fine.) Stop when dough stream breaks naturally or pot is full.
  • Cook until underside is golden, about 1 1/2 minutes, and turn over with chopsticks. Then cook until golden, about 1 1/2 minutes more. Transfer churro with chopsticks to paper towels to drain and sprinkle with sugar.
  • Make more churros in same manner, returning oil to 400°F between batches.
  • Break churros into pieces if desired and serve immediately.

1 egg, beaten
1/4 c ice water
1 tsp white vinegar
cinnamon and sugar mixture

  • 1. In a large bowl, combine flour and salt. Cut in crisco with a pastry knife until it resembles coarse crumbs.
  • 2. Combine beaten egg and ice water. Sprinkle over flour. Add in white vinegar. Mix until it all comes together to form a ball. Add more water if its looks too dry. Wrap in plastic wrap and refrigerate for 30 minutes.
  • 3. Roll out dough into 6 inch rounds. Fill with favorite fruit filling, wet edges with a little water, fold over and crimp together with a fork.
  • 4. Deep fry for 2-4 minutes until golden brown. Sprinkle with cinnamon and sugar.

2 1/4 c warm water... not hot ,
2 pkg active dry yeast quick acting
1 tsp table salt
1 tsp sugar
canola oil for frying
1 box powdered sugar for dusting the cooked zeppole
opt cinnamon sugar for dusting
small paper bags ( to put powdered sugar in when zeppole's are cooked)
paper towel to drain the cooked zeppole

  • 1. Use a fry daddy for frying. If you don't own one use a deep pot and fill half way with oil.. oil should be 375*.Do not let oil burn higher. Use only canola oil. Be careful not to have any water running because it will splatter the oil.. keep pot handle holding oil turned in.. So you don't accidentally hit it and spill oil.. Safety first..
  • 2. in large bowl add two packets dry yeast, sugar,1/4 cup of warm water.. mix well and let sit for 5 minutes till you see tiny bubbles around the edges.. this is proofing the yeast so You know the flour and yeast will rise..
  • 3. As soon as the bubbles form in the yeast add the flour, salt, and warm water to the bowl. Mix well . should look like a loose pancake mix. should not be dry at all.. take a paper towel and dip in oil and surround the bowl with a wipe of oil.. cover the bowl with a towel. make sure it is a heavy towel completely covered. place some where warm. like the oven or a warm corner of the room in the kitchen.. let sit for 1 1/2 hour to 2 hours. it will have risen. very loose dough.
  • 4. Test oil in pot or fry daddy. Do this by putting the end of a wooden spoon in the oil. If it sizzles like it is cooking the oil is ready. Now you can drop these Zeppole's mix in two ways.. One is to take two table spoons and keep a little canola oil in a cup and dip them in the cup of oil each time before you pull out a heaping spoon of dough . Push off the dough with the other spoon into the oil.. You should have a light hand. Don't just plop the dough. Let it fall off the spoon lightly. If u want you can use your hands.. oil your hands and take a small amount and let drip in the oil very slowly.. make sure to keep your hands high enough not to touch oil.. As soon as dough hits oil it will start to sizzle and start to brown. As soon as you see a light brown turn the Zeppole's over to make an even fry on both sides. When they are fully light brown they should be cooked..take out with spider or slotted spoon . Let spoon stay over pot of oil and let excess oil from the cooked zeppole drip in pot till dry so no excess oil drops off on the the paper towel. now place on paper towel. Let sit for a minute then turn over to drain on other side on the paper towel.. for another minute. Put powdered sugar in paper bag and throw the cooked Zeppole in the bag and shake the bag. pour out on a plate.
  • 5. These are very crispy since the dough is not a heavy Pizza dough. I do have friends that buy pizza dough and fry the same way as this recipe does with the lighter dough.. the difference is the pizza dough fried is very heavy and doughy.. if made small they pass.. So I hope everyone tries these and has a ball making and eating them.

3 c flour
1 c crisco
1 tsp salt
cold water until sticky

Steps:

  • 1. Using a fork or a dough blender, combine flour and crisco, working into a cornmeal stage. Add enough cold water to make a sticky dough. Roll out in flour and roll into a square. I have no idea how many this makes. This dough needs to be a tough dough, so you can fry it and it will hold together.
  • 2. Roll into squares, put fruit mixture in middle, fold and seal edges with a fork and drop into hot Crisco until nice and golden brown.
  • 3. Gram always used her iron skillet to make these. I remember peach, apple and raisin. Makes my mouth water just to think about them. Good Luck!

1 cup cornmeal
1 cup flour, plus more for dusting
1 teaspoon baking powder
1 tablespoon sugar
1/2 teaspoon salt
Cold water, enough to make a stiff dough

Steps:

  • To make this festival recipe, mix the cornmeal, flour, baking powder, sugar, and salt in a bowl. Add just enough cold water to make a stiff dough. Flour your hands well and knead the dough on a lightly floured surface for just a minute or so. Divide the dough into 12 portions. Roll each portion into a small cigar or sausage shape that's somewhat tapered at the ends. Pour enough oil into a skillet to reach about 1 inch deep. Dough
4 tbsp softened butter
1/4 cup light brown sugar
3 tbsp sugar
1/4 tsp vanilla extract
2 tbsp vegetable oil
1/4 tsp salt
1/2 cup flour
1/4 cup chocolate chips
1-2 tbsp water
corn starch for rolling dough in
Batter-
1 Egg
1 cup Ice Cold Water
1 cup Self Rising flour
2 tbsp Confectioners Sugar

Steps:

  • In a large mixing bowl, cream together light brown sugar, sugar and butter. While mixing, add vanilla and 1 tbsp of oil, followed by slowly adding the 1/2 cup flour. Add salt, followed by second tbsp of oil. The dough may be dry and crumbly. While mixing, slowly add enough water to give the dough a moist but not overly wet consistency. Mix in chocolate chips. Remove from mixer and roll dough between your palms into ping pong size balls. Roll in corn starch, shake to remove excess flour. With a fork, mix together egg and water. Add flour and sugar to egg and water mix. Dip cookie dough balls in batter, make sure that the dough is completely covered in batter so that they won't leak out dough when frying. Using a slotted spoon or mesh spider quickly place 3-4 at a time in 375 F oil for 1 and a half to 2 minutes minutes until golden brown on the outside. Serve in paper trays and top with chocolate sauce and powdered sugar.
