When you feel like some home-style comfort, there's nothing better than the creamy warmth of a rich sauce. This dish is great served with boiled, pan-fried potatoes and a simple green salad.

4 x 180g chicken breasts, skin on
sea salt
extra virgin olive oil
horseradish cream sauce
100ml dry vermouth
sea salt and freshly ground pepper
200ml pure whipping cream
3 tbsp unsalted butter, cold and chopped
2 tbsp parsley, chopped
5 tbsp fresh horseradish, grated
1 lemon

Steps:

  • Remove the chicken from the fridge about 1 hour before cooking and season liberally with sea salt. Meanwhile, warm the oven to around 70C. Place a heavy-based frying pan large enough to fit 4 chicken breasts over a medium-high heat until hot. Brush the chicken with extra virgin olive oil and put in the pan, skin side down. Cook for 5 minutes until the skin is crisp, then turn over and cook for a further 4 minutes. Put on a plate and rest in the warm oven. To make the sauce, pour the vermouth in the same pan and scrape well. Add a good pinch of sea salt and the cream and cook for 2 minutes at a rapid boil. Turn the heat down to medium, slowly add the butter and whisk to incorporate. Remove frying pan from heat, add the parsley and horseradish, then season with freshly ground pepper and a squeeze of fresh lemon juice. Place one chicken breast on each plate and pour a generous amount of sauce over each. Serve immediately. HOT TIPS You can also make the sauce with roast chicken - just deglaze the roasting pan with the vermouth, then follow the rest of the recipe. I like to serve boiled potatoes that have been pan fried with this dish, along with a simple green salad or boiled beans. Over the years, the chicken fried steak technique was also used on chicken breasts, pounded thin and soaked in buttermilk, resulting in crispy, tender chicken. Like its steak counterpart, chicken fried chicken should be served with a peppery white gravy.

4 boneless, skinless chicken breasts (about 1 1/2 pounds)
1 3/4 cups all-purpose flour
3/4 cup cornstarch
2 teaspoons paprika
1 1/2 teaspoons garlic powder

1 tablespoon hot sauce
1 large egg
Canola, vegetable or peanut oil, for frying
3 tablespoons unsalted butter
2 tablespoons all-purpose flour

1/2 teaspoon apple cider vinegar

Steps:

  • Preheat the oven to 200 degrees F. Fit cooling racks into 2 baking sheets.
  • Place 1 chicken breast in a one-gallon resealable plastic bag with the seal left open (alternatively, place between 2 pieces of plastic wrap). Pound with a meat mallet or rolling pin until it is 1/4 to 1/2 inch thick. Repeat with the remaining chicken.

Dredge 1 chicken breast in the dry ingredients to coat, then dip in the wet ingredients and shake off any excess. Dredge once again in the dry ingredients to coat and transfer to one of the cooling racks. Repeat with the remaining chicken.
  • Fill a deep cast-iron skillet with 3/4 to 1 inch of oil. Heat the oil over medium-high heat until a deep-fry thermometer registers 350 degrees F. Working in 2 batches, fry the chicken until golden brown, 4 to 5 minutes per side. Place on the second cooling rack and keep warm in the oven until ready to serve.
  • For the gravy: Melt the butter in a medium saucepan over medium heat. Add the flour and cook, whisking continuously, until light brown, about 2 minutes. Pour in the milk in a steady stream while whisking. Add 1 1/4 teaspoons salt and 1 teaspoon pepper, then the vinegar. Cook at a simmer, stirring constantly, until thickened, 1 to 2 minutes.

2 egg whites (about 4 tablespoons)
