SAGANAKI (FRIED CHEESE) GREEK STYLE
This is wonderful to serve as an appetizer, serve lots of lemon wedges and I like crisp Pita Bread Pieces. If you cannot get the Greek cheese you may in a pinch use Italian Provolone - I had to use this because I didn't plan far enough ahead to get the good Greek Cheese. Evelyn/Athens posted a link to this recipe (off Zaar) and when I searced Recipezaar I could not find one like this. Thanks Evelyn. The recipe is simple and very good.

CYPRIOT FRIED HALOUMY CHEESE (SAGANAKI HALOUMI)
With gluten free option. A very quick to prepare tasty meze. We enjoy this as a delicious breakfast item or it could always be a snack! I serve it with pita bread but a crusty bread would be very good. Modified from The Complete Middle East Cookbook by Tess Mallos, Cyprus section.

Steps:
- Dredge the cheese slices in flour, tap off any excess. Chill while oil heats.
- In a large non-stick skillet, heat oil over high heat, add the cheese slices and saute until golden brown on all sides, about 1 1/2 minutes on each side. Keep warm in oven while finishing next batches. Transfer cheese to platter, season with pepper, sprinkle with parsley, and finish with squeeze of lemon.
Tips:
- Use high-quality cheese that melts well, such as halloumi, kefalotyri, or mozzarella.
- Cut the cheese into thick slices, about 1/2 inch thick, to prevent it from becoming too thin and crispy.
- Coat the cheese slices in flour before frying to help them brown evenly and prevent them from sticking to the pan.
- Heat the oil over medium-high heat before frying the cheese to prevent it from sticking to the pan.
- Fry the cheese slices for about 2 minutes per side, or until they are golden brown and slightly melted.
- Serve the fried cheese immediately with lemon wedges and a drizzle of honey.
Conclusion:
Fried cheese saganaki is a delicious and easy-to-make appetizer that is perfect for any occasion. It is a popular dish in Greece and Cyprus, and it is often served with a glass of ouzo.
