FRIED CABBAGE AND KIELBASA

Fried Cabbage and Kielbasa image

This recipe works well for many occasions. This is also the type of recipe that you can add to or build on to make your own. If you aren't too crazy about the taste of cabbage, keep in mind that the onion, bacon drippings, and kielbasa seems to tone down that cabbage-y taste a bit, and you can also add other things or spices to tone it down.

PASTA WITH SAUSAGE, CARAMELIZED CABBAGE AND GOAT CHEESE

Pasta With Sausage, Caramelized Cabbage and Goat Cheese image

Pasta with cabbage is a common combination across much of Central and Eastern Europe. In this quick weeknight meal, an entire head of cabbage is cooked in the fat left behind by sweet Italian sausage. Goat cheese adds tang and helps create a cream sauce that ties everything together. Feel free to use this recipe as a guideline to come up with your own variation: Try it with your favorite shape of pasta, swap out the thyme for dill, parsley or another herb, or substitute the goat cheese for Parmesan.

Time 45m

Yield 6 servings

Number Of Ingredients 9

Kosher salt and black pepper
8 ounces dry rotini or other shaped pasta
4 tablespoons extra-virgin olive oil
8 ounces sweet Italian sausage, casings removed
1 small head savoy cabbage (about 1 1/2 pounds), quartered, cored and thinly sliced
1 medium yellow onion, thinly sliced
1 teaspoon fresh thyme leaves
1 cup heavy cream
4 ounces goat cheese

Steps:

  • Bring a large pot of heavily salted water to a boil. Add the pasta and cook, stirring occasionally, until al dente, about 7 minutes; drain.
  • Meanwhile, heat 2 tablespoons olive oil in a large skillet or Dutch oven over medium. Add the sausage and cook, breaking apart with a wooden spoon, until fully cooked and crumbled, about 5 minutes. Using a slotted spoon, transfer the sausage to a plate, leaving the fat in the pan.
  • Add the cabbage, onion, thyme, 1 teaspoon salt, 1/2 teaspoon pepper and the remaining 2 tablespoons olive oil to the skillet. Cover and cook, stirring regularly, until the cabbage has completely wilted and starts to brown, about 15 minutes.
  • Reduce the heat to low and stir in the heavy cream, goat cheese and reserved sausage until evenly combined. Stir in the pasta, season to taste with salt and pepper and serve.

Time 40m

Yield 6 serving(s)

Number Of Ingredients 9

3 tablespoons butter or 3 tablespoons bacon fat
1 small green cabbage, chopped
1/2 cup onion, chopped
1/2-3/4 lb smoked sausage, sliced (I like Conecuh, Original)
1 (15 ounce) can diced tomatoes, undrained (I like Hunt's Petite Diced)
1/4 teaspoon garlic salt, to taste
1/4 teaspoon Tony Chachere's Seasoning, to taste (optional)
salt, to taste
black pepper, to taste

Steps:

  • Chop/slice the sausage, cabbage, and onion.
  • In a large non-stick skillet, pre-cook the sliced sausage about 3 minutes to render some of the fat out. Remove sausage from skillet and drain on paper towels if needed. Set aside. Wipe the skillet clean.
  • In the same skillet, melt the butter. Add cabbage and onion and cook and stir on medium-high for about 5 minutes, until cabbage starts to wilt.
  • Add remaining ingredients, and the sausage.
  • Cover the skillet and cook for about 10 minutes.
  • Uncover, and finish cooking until cabbage is desired tenderness and most of liquid has been reduced.

Love the combo of cabbage & bow tie pasta.

Provided by Jill T

Categories     Pasta

Time 45m

Number Of Ingredients 7

3 c uncooked bow tie pasta
8 c chopped cabbage
1 c chopped onion
6 Tbsp margarine
1/8 tsp pepper
1 lb kielbasa
for a healthier dish i use olive oil in place of the margarine & low fat kielbasa. you may want to add salt, but i try to limit sodium.

Steps:

  • 1. Cook bow tie pasta as directed on pkg. Drain, rinse with hot water. In large skillet, cook cabbage & onions in 4 tbsp of margarine for about 15 minutes or until lightly browned, stirring occassionally. Add pasta & remaining 2 tbsp. margarine; mix well. Place kielbasa on top of mixture. Cover; cook over low heat about 15-20 minutes or until kielbasa is hot & flavors have blended.

Tips:

  • For the best flavor, use fresh, high-quality cabbage. Look for heads that are firm and heavy, with tightly packed leaves.
  • Be sure to wash the cabbage thoroughly before cooking. This will help to remove any dirt or pesticides.
  • To save time, you can use pre-shredded cabbage. However, if you are using a whole head of cabbage, be sure to shred it thinly.
  • If you don't have any Italian sausage, you can use ground beef or pork instead.
  • Be sure to cook the sausage until it is browned all over. This will help to develop its flavor.
  • Add the cabbage and cook until it is softened. You may need to add a little water or broth to help the cabbage cook through.
  • Stir in the pasta and cook until it is al dente. This means that the pasta should be tender but still have a slight bite to it.
  • Season the dish with salt, pepper, and garlic powder to taste.
  • Serve the pasta immediately, topped with Parmesan cheese.

Conclusion:

Fried cabbage pasta with sausage is a delicious and easy-to-make dish that is perfect for a weeknight meal. The cabbage and sausage are cooked together until they are tender and flavorful, and the pasta is cooked al dente. The dish is then seasoned with salt, pepper, and garlic powder to taste.
