BOURBON FRIED APPLES

Bourbon Fried Apples image

This is a slightly healthier spin on traditional fried apples. The skin is left on, and the reduced butter and sugar are offset with flavor-boosting bourbon, raisins, cinnamon, and lemon juice. I use Cameos for this recipe, as they are naturally sweet and hold their shape well, but if you're using a tarter variety, you may wish to increase the brown sugar and omit the lemon juice. Golden rum can substitute for the bourbon.

FRIED APPLES'N'ONIONS (LITTLE HOUSE)

Fried Apples'n'onions (Little House) image

This is a traditional "country" dish. Sugar is optional, but I think it's better with it. Try this for breakfast with fried potatoes. This recipe came from "The Little House Cookbook" by Barbara M Walker, and the food featured in "Farm Boy."

Provided by Sascha

Categories     Breakfast

Time 15m

Yield 4 serving(s)

Number Of Ingredients 4

1/2 lb sliced bacon or 1/2 lb salt pork
6 yellow onions (2 pounds)
6 tart apples (2 pounds)
2 tablespoons brown sugar

Steps:

  • Fry bacon or salt pork slices in a skillet until brown and crisp. Set them aside on a warm serving platter.
  • While the meat is frying, peel the onions and slice them as thinly as possible.
  • Core the apples and cut them crosswise in circles about 1/4 inches thick. Apple skins help the slices keep their shape and add color to the dish, so don't peel unless the skins are tough or scarred.
  • Drain all but 1 tablespoon of fat from the skillet, then add the onion slices. Cook them over medium high heat for about 3 minutes.
  • Cover with apple slices in an even layer. Sprinkle brown sugar over all, cover the skillet, and cook until tender, a few minutes more. Stir only to prevent scorching.
  • Remove to the warm plate with the bacon or salt pork slices and serve.

FRIED APPLES

Fried Apples image

I love these apples as a side dish with pork, or over ice cream...delish!! I always double the butter and brown sugar for extra sauce.. Enjoy! My photos

Provided by Cassie *

Categories     Fruit Sides

Time 35m

Number Of Ingredients 4

4 - 5 braeburn or granny smith apples
1/4 tsp cinnamon
2 Tbsp butter - i double
4 Tbsp brown sugar - i double

Steps:

  • 1. Peel the apples and cut into quarters. Remove the cores and cut quarters into 1/2 inch thick slices. Place the slices in a bowl of cold lemon water to prevent browning. Soak for 5 or 10 minutes and then drain the apples and pat them dry with a paper towel.
  • 2. In a large skillet, heat the butter until it is bubbling.
  • 3. dd the apple slices to the skillet and continue to cook over medium high heat for approximately 5 minutes or until tender crisp and beginning to brown. Turn several times to brown evenly.
  • 4. Mix cinnamon with brown sugar.
  • 5. Add the brown sugar and continue to cook until sugar has melted and started to caramelize. Apple slices should be tender. Serve as a side dish while still warm. We love these as a side dish, or over ice cream.

Tips:

  • Choose the right apples: For the best results, use a firm, tart apple that holds its shape well when cooked, such as Granny Smith, Honeycrisp, or Pink Lady.
  • Slice the apples evenly: This will help them cook evenly and prevent some pieces from becoming mushy while others are still hard.
  • Don't overcrowd the pan: When frying the apples, make sure to leave enough space between each piece so that they can cook evenly and get crispy.
  • Use a well-seasoned cast iron skillet: This will help to prevent the apples from sticking and will give them a nice, even color.
  • Cook the apples over medium heat: This will help them to cook through without burning.
  • Flip the apples regularly: This will help them to cook evenly and prevent them from burning.
  • Add sugar and spices to taste: Once the apples are cooked, you can add sugar, cinnamon, nutmeg, or other spices to taste.

Conclusion:

Fried apples are a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. They can be served on their own, with whipped cream or ice cream, or used as a topping for pancakes, waffles, or oatmeal. With a few simple ingredients and a little bit of time, you can easily make this classic dish at home.
