1 tablespoon sugar
1-1/2 teaspoons lemon juice
1 medium tart apple, cored

Steps:

  • In a skillet, melt butter over medium heat. Stir in sugar and lemon juice. Cut the apple into four rings; add to skillet. Reduce heat. Cover and simmer for 10-15 minutes or until apple rings are tender, turning frequently. Serve warm.

I think I practically lived on these when I was a kid...grandma made them for us all the time:) When served as a dessert, they are great with a dollop of whipped topping.

4 -6 tart cooking apples, peeled and cored
1 cup flour
2 tablespoons sugar
1 teaspoon baking powder
1 dash salt
2 eggs, lightly beaten
2/3 cup milk
1 tablespoon Crisco shortening, melted
Crisco shortening or oil, for frying
cinnamon (for sprinkling)
sugar (for sprinkling)

Steps:

  • Slice apples cross-wise into 1/2-inch thick rings.
  • Combine flour, sugar, baking powder, and salt in medium bowl.
  • In separate bowl, combine eggs, milk, and melted Crisco.
  • Add egg mixture to dry mixture and beat until smooth.
  • In large, heavy skillet, preheat about 1/2 inch deep shortening or oil to about 365 degrees.
  • Dip apple slices, one at a time, into batter to coat well.
  • Fry in hot oil about 2 1/2-3 min.

1/4 cup milk
1/2 cup flour
1 teaspoon baking powder
1 pinch salt
4 -5 apples, cut into 15 rings about 1/4 inch thick
5 teaspoons cinnamon
2 teaspoons powdered sugar
oil (for frying)

Steps:

  • Beat together egg and milk.
  • Add flour, salt and baking powder mix well.
  • Heat oil in deep skillet until a drop of water spatters.
  • Sprinkle the apple rings with cinnamon.
  • Dip each ring in batter.

3 -4 large gala apples
1 cup all-purpose flour
1/4 teaspoon baking powder
2 tablespoons sugar
1/4 teaspoon salt
1/4 teaspoon cinnamon
1 large egg, beaten
1 cup buttermilk
vegetable oil, for frying

Steps:

  • In a medium-sized bowl, add the flour, baking powder, sugar, salt and ¼ teaspoon cinnamon. Set aside.
  • In a small bowl, combine the egg and buttermilk and mix well.
  • In a third dish, mix the remaining ⅓ cup sugar and 2 teaspoons of cinnamon and reserve for topping.
  • Slice apples into ¼-inch slices. Using a biscuit cutter, remove the cores along with the seeds, leaving ¼-inch-wide rings. Pat the apple rings dry with a paper towel to remove excess moisture.
  • Over medium-high heat, heat the vegetable oil in a frying pan to 350 degrees Fahrenheit.
  • As the oil heats, combine the flour mixture and the buttermilk mixture together into the batter, mixing well to remove any lumps.

This recipe uses pancake batter to coat apple rings, then fried to perfection with an apple cider syrup! You can substitute whole wheat pancake batter or make your own. I have added my own recipe for apple cider syrup. The original called for reducing the cider by half and gave no amounts. This one is much quicker and yummy. I didn't have Bisquick, so made my own from a recipe on this site, substituting about 1/3 of the flour with whole wheat flour. From Carla Hall on the new ABC program, the Chew. Hootie!

1 cup Bisquick baking mix (or whole wheat pancake mix)
1 egg
1/2 cup milk (I used soy)
1 teaspoon pumpkin pie spice (or apple pie spice)
1/2 lemon, zest of
2 medium apples, pared and cored
1 3/4 cups apple cider (or juice)
1/4 cup packed brown sugar
1 -2 teaspoon lemon juice (optional)
2 tablespoons cornstarch
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg

Steps:

  • To make hot apple cider syrup:.
  • Bring juice and brown sugar to a boil, and simmer until sugar is dissolved. Stir in lemon juice(if using), cornstarch, cinnamon and nutmeg.
  • Reduce heat to medium low and simmer about 5 minutes, till syrup consistency.
  • Beat baking mix, egg and milk with whisk until smooth. Add pumpkin pie spice(or apple pie spice) and lemon zest to batter and mix until incorporated.
  • Grease griddle.
  • Core and cut apples crosswise in 1/8-inch slices.
  • Using a toothpick dip slices into batter(I used my fingers, but you could also use a fork or spoon). Cook on medium hot griddle until golden brown, turning once(about 3-5 minutes each side). Serve hot with apple cider syrup.

1 cup beer (not dark)
1 teaspoon salt
1/2 cup fresh lemon juice
2 tablespoons firmly packed light brown sugar plus additional for sprinkling the rings
4 Granny Smith or Golden Delicious apples
vegetable oil for deep-frying

Steps:

  • In a bowl whisk together the flour, the beer, and the salt until the batter is smooth and let the batter stand, covered, at room temperature for 1 hour. In another bowl combine the lemon juice and 2 tablespoons of the brown sugar, on a baking sheet or a shallow tray arrange the apples, peeled, cored, and cut into 1/4-inch-thick rings, in one layer, and pour the lemon juice mixture over them. Let the apple rings stand, covered, at room temperature, turning them once, for 1 hour and pat them dry.
  • In a deep fryer or large heavy skillet heat 1 1/2 inches of the oil to 375°F., dip each apple ring in the batter, coating it well and letting the excess batter drip off, and in the oil fry the rings in batches, turning them once, for 4 minutes. Transfer the rings to paper towels, let them drain well, and sprinkle them with the additional brown sugar.

1 large egg
1/2 c milk
1 tsp pumpkin pie spice
zest of 1/2 lemon, reserve juice and other 1/2 lemon zest
2 medium apples, pared and cored, leave whole
APPLE CIDER SYRUP:
2 c apple cider or apple juice
1 medium reserved lemon juice and zest
1/4 tsp cinnamon
1/4 c granulated sugar
2 Tbsp cornstarch
1/4 tsp nutmeg
1/4 c butter

Steps:

  • 1. Beat baking mix, eggs and milk with rotary beater until smooth. Add pumpkin pie spice and lemon zest of 1/2 a lemon to the batter and mix until incorporated. Grease griddle. Core and cut apples crosswise in 1/8 inch slices that look like doughnuts. Using a toothpick dip slices into batter. Cook on hot griddle until golden brown, turning once. Serve hot with apple cider syrup.
  • 2. Apple Cider Syrup: Combine sugar ,cornstarch, nutmeg, and cinnamon in a saucepan. Pour in apple and lemon juice and zest. Cook and stir constantly until thickened and it comes to a boil. Boil 1 minute and continue to stir. Remove from heat and stir in butter. Great over French toast, pancakes, bread pudding all cakes and pies and other desserts.

1/2 cup plus 1 tablespoon sugar, divided
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup milk
1 egg

3 medium baking apples
oil for frying

  • In medium mixing bowl mix flour, cornstarch, 1 tablespoon sugar, baking powder and salt. In small bowl beat together milk and egg. Gradually add to flour mixture, beating with fork until well blended. Refrigerate for 1 hour.In small bowl combine remaining 1/2 cup sugar and cinnamon. Set aside. Peel and core apples. Cut crosswise into rings, 1/4-inch thick.In deep fryer, heat 1-1/2 to 2 inches Butter Flavor Crisco to 375°F. Dip apple slices in batter, allowing excess to drip back into bowl. Fry a few at a time in hot oil for 3 to 5 minutes, or until golden brown, turning frequently. Drain on paper towels. Dredge in cinnamon-sugar mixture. Serve immediately or keep warm in 175°F oven.
