Fried Apple Pancake Rings(Carla Hall) image

This recipe uses pancake batter to coat apple rings, then fried to perfection with an apple cider syrup! You can substitute whole wheat pancake batter or make your own. I have added my own recipe for apple cider syrup. The original called for reducing the cider by half and gave no amounts. This one is much quicker and yummy. I didn't have Bisquick, so made my own from a recipe on this site, substituting about 1/3 of the flour with whole wheat flour. From Carla Hall on the new ABC program, the Chew. Hootie!

1 cup Bisquick baking mix (or whole wheat pancake mix)
1 egg
1/2 cup milk (I used soy)
1 teaspoon pumpkin pie spice (or apple pie spice)
1/2 lemon, zest of
2 medium apples, pared and cored
1 3/4 cups apple cider (or juice)
1/4 cup packed brown sugar
1 -2 teaspoon lemon juice (optional)
2 tablespoons cornstarch
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg

Steps:

  • To make hot apple cider syrup:.
  • Bring juice and brown sugar to a boil, and simmer until sugar is dissolved. Stir in lemon juice(if using), cornstarch, cinnamon and nutmeg.
  • Reduce heat to medium low and simmer about 5 minutes, till syrup consistency.
  • Beat baking mix, egg and milk with whisk until smooth. Add pumpkin pie spice(or apple pie spice) and lemon zest to batter and mix until incorporated.
  • Grease griddle.
  • Core and cut apples crosswise in 1/8-inch slices.
  • Using a toothpick dip slices into batter(I used my fingers, but you could also use a fork or spoon). Cook on medium hot griddle until golden brown, turning once(about 3-5 minutes each side). Serve hot with apple cider syrup.

1 c bisquick baking mix
1 large egg
1/2 c milk
1 tsp pumpkin pie spice
zest of 1/2 lemon, reserve juice and other 1/2 lemon zest
2 medium apples, pared and cored, leave whole
APPLE CIDER SYRUP:
2 c apple cider or apple juice
1 medium reserved lemon juice and zest
1/4 tsp cinnamon
1/4 c granulated sugar
2 Tbsp cornstarch
1/4 tsp nutmeg
1/4 c butter

Steps:

  • 1. Beat baking mix, eggs and milk with rotary beater until smooth. Add pumpkin pie spice and lemon zest of 1/2 a lemon to the batter and mix until incorporated. Grease griddle. Core and cut apples crosswise in 1/8 inch slices that look like doughnuts. Using a toothpick dip slices into batter. Cook on hot griddle until golden brown, turning once. Serve hot with apple cider syrup.
  • 2. Apple Cider Syrup: Combine sugar ,cornstarch, nutmeg, and cinnamon in a saucepan. Pour in apple and lemon juice and zest. Cook and stir constantly until thickened and it comes to a boil. Boil 1 minute and continue to stir. Remove from heat and stir in butter. Great over French toast, pancakes, bread pudding all cakes and pies and other desserts.
